Company Description
We are seeking an exceptional Restaurant Manager to join the pre-opening team of Delano London. Reporting to the Director of Food & Beverage, you'll take the lead on Lana Lusa, our all-day restaurant, while playing a senior role across the wider Food & Beverage operation. You'll shape the guest experience, build and inspire the opening team, and bring together warm, intuitive service with strong commercial performance and a genuine sense of London energy.
Set to open its doors in 2026, Delano London will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. The 67-key luxury retreat will blend soft minimalist design, generous living spaces and park views creating a distinctive lifestyle destination where design, dining, nightlife and wellbeing seamlessly converge.
Job Description
What you’ll do…
- Lead the day-to-day operation of Lana Lusa across breakfast, lunch and dinner, creating a service style that feels polished, warm, intuitive and never scripted.
- Act as a senior member of the Food & Beverage leadership team, maintaining a visible presence in service and supporting the Director of Food & Beverage across the wider operation, including Rose Bar, Room Service and the Private Dining Rooms.
- Own the Lana Lusa guest journey from arrival to farewell, ensuring every touchpoint feels personal, confident and unmistakably Delano.
- Lead and develop a high-energy team by setting clear expectations, coaching in the moment and creating an environment where people can be themselves and perform at their best.
- Recruit, onboard and train the opening team, embedding strong service standards, product knowledge and a culture of genuine hospitality from day one.
- Implement SOPs, training plans and luxury service standards while leaving room for personality, instinct and individuality on the floor.
- Partner closely with the Executive Chef on menus, service flow, pacing and the overall dining experience, ensuring the food and front-of-house proposition work seamlessly together.
- Coordinate service delivery with Rose Bar, Room service and the Private Dining Rooms so that the guest experience feels connected across the hotel.
- Drive commercial performance through revenue, average spend, labour productivity, payroll control and close attention to food and beverage GP.
- Use guest feedback, reservations insight and operational data to identify opportunities, solve problems quickly and continuously improve the experience.
- Plan rotas and team deployment effectively, balancing business levels, service standards and productivity while maintaining strong floor coverage.
- Support VIP dining, private events, hotel activations and special moments, working collaboratively across departments to deliver memorable experiences.
- Keep a close eye on London's evolving restaurant scene and bring forward fresh ideas that keep Lana Lusa and Rose Bar relevant, engaging and connected to its neighbourhood without simply chasing trends.
- Ensure full compliance with food safety, Health & Safety, licensing, company policies and all relevant legal and brand requirements.
- Support Manager on Duty responsibilities and step across outlets when needed, bringing a collaborative, one-team approach to Food & Beverage leadership.

Qualifications
What we’re looking for…
- Strong restaurant leadership experience, ideally at senior management level within a luxury hotel, premium restaurant or high-quality lifestyle operation.
- Previous pre-opening experience would be a real plus - you enjoy building something from the ground up and understand what it takes to turn plans into a confident opening operation.
- A natural host with a strong sense of the guest journey, able to combine detail and discipline with warmth, personality and instinctive hospitality.
- Strong commercial awareness and comfortable managing revenue, labour, payroll, GP, budgets and operational performance.
- A natural at leading and developing others, you coach with clarity, lead by example and create an environment where your team can be their best self.
- Balance a structured, results-driven approach with creativity and flexibility, staying calm when the pace changes and finding solutions quickly.
- Comfortable with restaurant systems including POS, reservations, inventory and rota platforms, and you use data without losing sight of the human side of hospitality.
- An excellent relationship builder, confident working with Culinary, other hotel teams, senior leaders and ownership; you're passionate about what we can achieve together.
- Culturally aware and globally minded, you understand the energy and expectations of London's dining scene and are flexible to work the evenings, weekends and key moments that hospitality demands.
