The iconic Grade II listed Guildhall is being thoughtfully transformed into Bristol's first luxury five star lifestyle hotel. Restaurant Manager

As our Restaurant Manager, you'll play a pivotal role as a member of the senior management team during the pre-opening of our breathtaking hotel. This is a fantastic opportunity to build and lead our signature Middle Eastern / Mediterranean inspired restaurant, overseeing service from breakfast through to dinner, as well as our Private Dining Room, meetings and events.

Working closely with the wider leadership team, you'll recruit and develop a high-performing food and beverage team, establishing service standards, training and Standard Operating Procedures that define the Gotham five star experience. We are looking for someone passionate about exceptional hospitality, you'll bring the Gotham spirit to life by delivering memorable guest experiences and creating one of the city's most exciting dining destinations from day one.

Your Key Responsibilities Will Include

  • Ensure the implementation and monitoring of brand standards and service levels are achieved in the restaurant.
  • Ensure all service standards are maintained.
  • Ensure all daily meetings are happening.
  • Ensure all standard checklists are used as prescribed.
  • Empower team to be able to handle all guest feedback for positive and negative and record correctly.
  • Actively consider prevention, recovery and investigation of any complaints.
  • Strive to anticipate customer needs whenever possible and react to these to enhance customer satisfaction.
  • Proactively manage guest feedback, empowering the team to handle both positive and negative comments effectively.
  • Ensuring a presence on the floor to guests and colleagues always.
  • Ensure that company and legal standards for cleanliness are maintained within the department.
  • Ensure that the team are correctly uniformed, in line with Company Standards and understand the importance of personal hygiene.
  • Ensure that the team are punctual, polite, courteous and helpful to guests and colleagues at all times.
  • Be fully conversant with the facilities, services and promotions offered by the hotel and whenever appropriate offer this information to the guest.
  • Monitor and control departmental costs and controls.
  • Prepare check and monitor departmental forecasts and rotas to ensure they are in line with set budgets and meet the service and business needs.
  • Control costs through correct stock usage, storage, rotation, par stock levels maintained, purchase order systems and minimising wastage as per Company standards.
  • Ensuring assistance in monthly stocktakes and actioning any discrepancies.
  • Financial awareness and understanding of how the role impacts the hotel Profit and Loss account.
  • Managing and implementing local and departmental product/service knowledge to maximise sales.
  • To communicate and share knowledge with other hotel departments.
  • Regularly visit competitor hotels and restaurants to compare and contrast service and product.
  • Ensure team awareness of hotel facilities, restaurant /bar opening times, hotel promotions, products, services and disabled facilities.
  • To carry out departmental communication meetings every 4-6 weeks.
  • Know who to ask or where to find information if unable to answer customer queries.
  • Manage all HR and employee relations issues according to HR Company standards and How to Guides.
  • Communication of all Employee relations issues and HR/Learning and development activity at HR/HOD 1:1 meetings.
  • Manage departmental recruitment and retention planning and activity according to budget /manpower planning levels and by agreement of General Manager/Operations Manager.
  • To carry out the departmental welcome induction to the set company standard.
  • To carry out 1:1 meetings and performance reviews with team members and agree developmental training and action plans.
