At Sticks’n’Sushi we serve high-quality, fresh food based on a unique combination of classic and creative sushi along with sticks from the grill. But we're not just in the restaurant business - we're in the business of birthdays, first dates, client wins, celebrations, reunions and memorable nights that people talk about long after the bill has been paid.

That's where you come in. We're looking for a Sales Manager to help turn more of those moments into bookings - and more bookings into long-term relationships. This isn't just about filling tables. It's about spotting the opportunity behind every enquiry, understanding what our guests need, creating the right experience for them and making sure we're maximising the commercial opportunity for the business along the way.

You'll take the lead on group dining, private dining, restaurant events and exclusive hires, while building relationships with the people who bring guests through our doors time and time again - from PA and EA networks to concierge partners, group bookers and repeat guests.

Someone who knows that a great sales conversation doesn't end with a booking. Someone who gets a buzz from turning an enquiry into an experience, an experience into a repeat visit, and a relationship into something that lasts.

  • Commercially minded and motivated by turning opportunities into revenue?

What you'll be doing at Sticks’n’Sushi:

  • Leading the group booking and restaurant events sales function, maximising reservations, conversion and commercial performance
  • Driving opportunities across large group dining, private dining and exclusive restaurant hires
  • Building and maintaining relationships with key PA and EA networks, concierge partners, group bookers, past guests and repeat customers
  • Owning the sales journey from initial enquiry through to confirmed booking, ensuring every opportunity is handled with care and commercial focus
  • Hosting venue show-rounds and client tastings, creating tailored proposals and coordinating with restaurant teams to maximise conversion
  • Looking for opportunities to increase spend through minimum spends, pre-orders, drinks packages and bespoke experiences
  • Building repeat-booking programmes and relationships that keep guests coming back
  • Working with our Marketing team to support campaigns, launches and opportunities that drive demand into our restaurants
  • Identifying opportunities to introduce new partners and third-party booking platforms where they make sense for the brand and the business
  • Keeping a close eye on the performance and ROI of third-party platforms, commissions and booking costs
  • Working closely with Operations and our restaurant teams to ensure every event is communicated clearly, commercially successful and delivered brilliantly
  • Ensuring thorough event run sheets and handovers are completed, and gathering client feedback after events to help us continually improve
  • Using sales and booking data to understand conversion, revenue and performance, and identify opportunities to do more
  • Supporting the wider reservations team with daily operations and administration when required

About you:

  • Previous experience in restaurant sales, reservations leadership, group bookings or events
  • Strong knowledge of OpenTable and restaurant reservations systems
  • Experience managing group bookings and events, ideally including private dining, large groups and exclusive hires
  • A strong track record of converting opportunities and generating revenue
  • Commercially minded, with a good understanding of minimum spends, conversion and maximising spend
  • A natural relationship builder who enjoys creating and maintaining a strong network
  • Highly organised, analytical and comfortable managing multiple priorities
  • Calm under pressure and able to keep the guest at the heart of what you do
  • Proactive, curious and collaborative, with the confidence to take ownership and make things happen
