About the Role
We are looking for an exceptional Restaurants & Bar Manager to lead our talented front-of-house and bar teams across The Headland’s food and beverage operation.
From Restaurant RenMor, our ‘Restaurant by the Sea’ overlooking the Atlantic, to the warm welcome of the Ballroom, the bar offering and event spaces, this is a varied role at the heart of the guest experience.
Whether our guests are joining us for cocktails overlooking Fistral Beach, an indulgent dinner, a celebration or a relaxed drink, you will ensure every experience feels unmistakably Headland.

Main Responsibilities
As Our Restaurants & Bar Manager, You Will
- Lead our Food & Beverage experience: Working with the F&B Manager, oversee restaurant and bar service across multiple areas, maintaining a seamless 5* standard throughout.
- Be present and hands-on: Lead from the floor during busy services, supporting your teams and creating a warm, confident and engaging experience for our guests.
- Champion our drinks offering: Bring passion and knowledge across wines, spirits, cocktails, beers and non-alcoholic drinks, helping us continually develop an exciting and commercially successful drinks offering.
- Develop brilliant teams: Coach, mentor and inspire our restaurant and bar teams, building their confidence, knowledge and service skills.
- Create memorable guest experiences: Ensure every guest receives attentive, effortless service and confidently resolve any concerns when they arise.
- Manage stock and costs: Maintain effective stock controls, accurate billing, reduced wastage and commercially sensible staffing levels.
- Work collaboratively: Build strong relationships with our Executive Head Chef, kitchen brigade and wider hotel teams to deliver a joined-up guest experience.
- Maintain exceptional standards: Ensure restaurant, bar, guest and heart-of-house areas consistently meet our expectations for presentation, cleanliness, hygiene and organisation.
- Keep moving forward: Look for opportunities to improve our service, products and guest journey and encourage your team to do the same.

What We're Looking For
Our Ideal Restaurants & Bar Manager Will Bring
- Proven management experience within a high-quality, busy restaurant, bar or luxury hotel environment.
- Strong experience of both restaurant and bar operations, with the confidence to move between different styles of service.
- A genuine interest in drinks, with good knowledge of wines, spirits and cocktails and an enthusiasm for sharing that knowledge with others.
- A passion for hospitality and creating memorable guest experiences.
- The ability to lead, motivate and develop a diverse front-of-house team.
- Strong commercial awareness, including experience of stock management, cost control, rotas and driving revenue.
- Excellent communication and organisational skills.
- A calm and approachable leadership style, even when service is at its busiest.
- An eye for detail and an uncompromising approach to service standards.
- Previous experience within a quality 4* or 5* hotel or comparable hospitality environment would be advantageous.

Salary & Contract
This is a full-time, permanent position, working across our restaurant and bar operations. The role will include evenings, weekends and bank holidays in line with the needs of the business.
Salary: £45,000
