Merchant Pubs & Bars
Merchant Pubs & Bars is an eclectic mix of pubs, bars, casual dining and event spaces across Glasgow. I'm looking for a Retail Business Manager to oversee our five venues and bring strong entrepreneurial, strategic, commercial and leadership abilities to this incredible opportunity.
This is a strategic role, not a caretaking one. You'll need an entrepreneurial mindset, someone who spots sales opportunities, drives turnover, and pushes performance up across every venue you touch. We are going through a phase of expansion, with more venues on the horizon, so you'll need to be organised and comfortable juggling multiple moving parts at once, and pivoting to the priorities of the role.
This is a genuinely exciting opportunity for the right person. These aren't one size fits all sites, they're characterful venues with their own personality, hosting live bands, comedy shows, podcasts and a whole host of live entertainment whilst delivering the very best of hospitality.

The Role
As Retail Business Manager, you'll be the commercial driving force behind our five Glasgow venues, setting the pace, spotting opportunities, and making sure every site is exceeding expectations.
What You'll Be Doing
- Taking commercial ownership of all five venues - sales, turnover, performance
- Identifying and acting on opportunities to grow revenue across the group
- Working across a diverse programme of live entertainment, including but not limited to bands, comedy, podcasts, markets and private functions
- Support your management teams in developing and executing robust sales strategies
- Driving sales whilst displaying mature cost control decision making
- Nurture your management teams, developing a strong talent pipeline
- Bringing high-level commercial thinking to everyday decisions
- Managing multiple projects and priorities as we expand into new venues
- Keeping things organised and on track through a busy period of growth
- Developing relationships with partners, brands and suppliers to support venue sales activities.

About You
- An entrepreneurial thinker who sees opportunities before anyone else does
- A track record of growing turnover and lifting performance in a multi site role
- Strong project and time management skills
- Commercially sharp, strategic, and able to operate with agility
- Someone who is excited by variety and personality in venues, not just standard operations
- A strong leader who sets the pace as well as the standards
- Excited by the idea of growing with a business
