JOB DESCRIPTION
The Chancery Rosewood is redefining luxury in Mayfair, housed in the former U.S. Embassy and reimagined by Sir David Chipperfield. With 144 suites by Joseph Dirand and a collection of dynamic dining and bar spaces, it’s a place where experiences are curated, conversations flow, and every detail matters.
Tobi Masa is Chef Masayoshi “Masa” Takayama’s Japanese restaurant in London. Meaning “to fly,” Tobi reflects a philosophy of freedom and creativity, combining traditional Japanese techniques, exceptional seasonal ingredients and Chef Masa’s distinctive approach to precision and simplicity. The restaurant offers an intimate omakase counter, a refined main dining room and private dining experiences in the heart of Mayfair.
As Restaurant General Manager - Tobi Masa, you will take complete ownership of the restaurant’s day-to-day operation, guest experience, team culture and commercial performance. Reporting to the Director of Food & Beverage, you will be a highly visible and hands-on leader, working closely with the culinary and front-of-house teams to ensure every service is delivered with precision, warmth and genuine hospitality.
You will lead the restaurant with the commercial focus of a senior business manager while protecting the calm, considered and highly personalised experience that defines Tobi Masa. This is an opportunity for an accomplished luxury restaurant professional to lead one of London’s most distinctive Japanese dining destinations.
Key Responsibilities
- Lead the day-to-day operation of Tobi Masa, ensuring exceptional service and a consistently high-quality guest experience.
- Take a visible leadership role during service, supporting the team and maintaining operational excellence.
- Build meaningful relationships with guests and create memorable dining experiences.
- Lead, coach and develop the front-of-house team, fostering a culture of excellence and collaboration.
- Manage recruitment, onboarding, performance and succession planning within the department.
- Drive commercial performance through effective management of labour, costs, revenue and profitability.
- Work closely with the culinary team to deliver a seamless food and beverage experience.
- Maintain strong control of stock, inventory and departmental budgets.
- Identify opportunities to enhance service standards, guest satisfaction and overall business performance.
- Ensure compliance with all health & safety, food hygiene and company policies.
- Act as a brand ambassador for Rosewood Hotels & Resorts, upholding the values and standards of the brand.

- Knowledge and appreciation of Japanese cuisine, omakase service and sake would be highly advantageous.
