Mission

As Senior Chef de Partie, you will oversee your assigned kitchen section, ensuring the highest standards of food preparation, quality, consistency and presentation. You will support the Executive Head Chef and Sous Chef in maintaining culinary standards while training and developing junior kitchen colleagues and ensuring your section operates efficiently throughout service.

Key Responsibilities – Operational Excellence

  • Oversee and organise your assigned kitchen section, ensuring it is fully prepared for service and operates efficiently.
  • Ensure all food from your section is prepared consistently and according to established product specifications and culinary standards.
  • Supervise and train Demi Chefs de Partie, Commis Chefs and Chef de Parties, supporting their development and productivity.
  • Monitor food and operating costs, control portions and minimise waste to support departmental profitability.
  • Ensure correct stock rotation, food storage, date labelling and effective monitoring of fridges and freezers.
  • Maintain the highest standards of cleanliness, food safety and hygiene, including HACCP procedures and regular core temperature checks.
  • Support the Head Chef and Sous Chef with menu development, food orders, rota planning and effective kitchen operations.
  • Liaise with Outlet Managers regarding guest feedback, menu items, daily features and promotions to ensure guest expectations are met.
  • Work flexibly across different kitchen sections when required, supporting effective deployment of the wider kitchen team.
  • Ensure kitchen equipment is used correctly, maintained to a good standard and operated safely, while complying with hotel policies and Health & Safety requirements.

What we're looking for

  • Previous experience as a Senior Chef de Partie or experienced Chef de Partie within a quality hotel or restaurant environment.
  • Strong knowledge of food preparation, cooking techniques and culinary standards.
  • Proven ability to organise and manage a kitchen section during busy service periods.
  • Experience training, supervising and developing junior kitchen team members.
  • Strong understanding of HACCP, food hygiene, Health & Safety and food storage requirements.
  • Experience with stock rotation, food ordering, portion control and waste reduction.
  • Ability to monitor food quality, presentation and consistency to established standards.
  • Strong organisational skills with the ability to balance operational and administrative responsibilities.
  • Excellent communication skills and the ability to work collaboratively with other kitchen and hotel departments.
  • Professional culinary qualification or recognised cooking certification is desirable.
