Senior Grill Chef – Heard.
Burgers worth gathering for.
Heard. is a premium fast-casual smash burger concept from 2 Michelin-starred chef Jordan Bailey, born from a desire to take an everyday classic and make it quietly exceptional. We combine top-quality, thoughtfully sourced ingredients with the rigour and technique of the world’s best kitchens. No gimmicks, no shortcuts - just maximum flavour done right.
After a massive year touring the UK’s biggest events, we opened our permanent home in Borough last year, pairing our signature burgers with considered natural wines, craft beer, and a warm, efficient service style.
Now, with our second site in Soho thriving, we are looking forward to our next chapter. With our third and fourth sites on the horizon, we are looking for a Senior Grill Chef to join our kitchen management team at a supervisory level - someone who can command the hottest section in the house while helping run a tight, efficient shift.
The Heard Package
- Pay: £16 - £17 per hour OTE (depending on experience and which Heard. restaurant you’re hired for).

What You’ll Do
- Master the Grill: Lead from the front during peak service. You’ll set the tempo, ensuring every smash burger hits the pass executed flawlessly to brand specs.
- Maintain Quality & Speed: Ensure guest feedback and mystery diner scores remain sky-high by keeping execution fast, precise, and delicious every single shift.
- Supervisor on the Ground: Act as a key link in the management team. You’ll help oversee the flow of service, keeping communication sharp, energy high, and the line running like clockwork.
- Stock & Operations Support: Assist with daily ordering, receiving deliveries, and taking charge of strict stock rotation (FIFO) to keep ingredients fresh and food waste to an absolute minimum.
- Train & Mentor: Take new Grill Chefs and Kitchen Porters under your wing. You'll coach them on the ground in real time - teaching speed, technique, consistency, and our kitchen culture.
- Champion Cleanliness & Compliance: Take pride in maintaining immaculate back-of-house areas. You'll enforce deep cleaning routines, maintain strict hygiene standards, and ensure full HACCP and food safety compliance so we are always 5-star EHO ready.

What You Bring
- Grill Mastery & Supervisory Experience: Proven experience as a Senior Chef de Partie, Grill Chef, or Section Lead in a high-volume, high-standard kitchen environment, ready to take on formal supervisory responsibility.
- Sharp Attention to Detail: A passion for pristine kitchen standards, tight stock control, and spot-on food safety compliance.
- A Team-First Energy: A positive, supportive attitude with a natural ability to motivate Kitchen Porters and junior chefs around you under pressure.
