We're looking for an experienced and ambitious Senior / Head Baker to join the Boxcar bakery team at an exciting point in its growth.
Initially, this is a night baking role, working hands-on in our current bakery at Boxcar Marylebone and taking a senior role in the overnight production of our breads, viennoiserie and wider bakery range.
But this isn't where the role stays. We're preparing to open a new central production unit (CPU), which will become an important part of the wider Boxcar bakery operation. As we make that move, this role will evolve with it, taking on responsibility for the new bakery and helping to oversee production across both sites.
We need someone with the technical skill to deliver exceptional product now, and the organisation, leadership and ambition to step into greater responsibility as we grow.
You'll work closely with our Executive Chef to build a bakery operation that is creative, consistent and able to grow without losing the craft and quality at its heart.
About You & The Role
You'll be an experienced baker with strong technical knowledge and a genuine love of the craft. You'll be confident across artisan bread, sourdough, fermentation and viennoiserie, including double lamination, and comfortable with the wider demands of a busy bakery.

You'll set a high standard at the bench and make sure quality and consistency hold throughout the shift. Just as importantly, you'll be able to organise a busy production environment, communicate well and naturally take responsibility when it's needed.
Once the CPU opens, the scope of the role will grow significantly. You'll play an important part in establishing the new operation, take responsibility for its day-to-day production, and work across both sites to keep products, processes and standards consistent.
You don't need to have managed a large bakery before. We're interested in someone with the foundations to take that next step: technically strong, organised, dependable and excited to help shape a growing operation. It's a great opportunity for an experienced baker who wants to stay close to the craft while taking real ownership of a bakery operation.
You'll need to be comfortable working night shifts initially, with the understanding that your working pattern and responsibilities will evolve as the CPU opens.
