Senior Sous Chef – Luxury Latin American Dining, Mayfair
We are seeking an experienced and passionate Senior Sous Chef to join the kitchen team at one of Mayfair's most vibrant and high-profile luxury dining destinations. This is an exceptional opportunity for a driven culinary professional to take on a senior leadership role within a fast-paced, high-volume, premium restaurant environment.
About the Role as Senior Sous Chef
As Senior Sous Chef, you will work closely with the Head Chef to lead and inspire the kitchen brigade, ensuring consistently exceptional food quality, presentation, and service across a busy and dynamic operation. You will play a key role in the day-to-day running of the kitchen, deputising for the Head Chef when required, and taking ownership of standards, training, and team development.
Key Responsibilities as Senior Sous Chef
- Support the Head Chef in overseeing all aspects of kitchen operations, including food preparation, quality control, and service standards
- Lead, mentor, and develop chefs de partie and commis chefs, fostering a positive and high-performing team culture
- Manage kitchen sections during service, ensuring smooth and efficient operation during high-volume periods
- Assist with menu development, recipe costing, and dish innovation
- Maintain rigorous standards of food hygiene, health and safety, and compliance (HACCP)
- Manage stock control, ordering, and supplier relationships to minimise waste and control costs
- Support rota planning, staff scheduling, and holiday cover
- Deputise for the Head Chef in their absence, taking full responsibility for kitchen performance

What We're Looking For in a Senior Sous Chef
- Proven experience as a Sous Chef or Senior Sous Chef within a high-end, high-volume restaurant environment
- Strong leadership skills with a track record of developing and motivating kitchen teams
- Excellent knowledge of Latin American, Mediterranean, or contemporary international cuisine (or a strong willingness to learn)
- A calm, organised approach under pressure, with meticulous attention to detail
- Solid understanding of food safety, hygiene standards, and cost control
- Flexibility to work evenings, weekends, and bank holidays as required
- A genuine passion for hospitality and delivering outstanding guest experiences
