The Role
We are recruiting a Senior Sous Chef for an established Japanese restaurant in East London. This is a high-profile opportunity to support the Head Chef in leading a team of 20 chefs in a dynamic, 200-cover restaurant serving modern Robata, skewers, and sushi. This role would suit an experienced Senior Sous Chef or a strong Sous Chef ready to step up.

The Senior Sous Chef Role
- Support the Head Chef in operational leadership of the kitchen.
- Execute and maintain a high-quality Japanese menu.
- Help lead a brigade of 20 chefs for high-volume service.
- Oversee Robata grill operations and traditional techniques.
- Assist with kitchen management, team development, stock control, suppliers, and compliance.
- Ensure seamless collaboration with front-of-house and hotel teams.
The Ideal Senior Sous Chef
- Proven experience as a Senior Sous Chef, Sous Chef, or strong Chef de Partie ready to step up in high-end Japanese restaurants.
- Expertise in authentic Japanese techniques, especially Robata grill cooking.
- Strong track record in high-volume kitchens (100+ covers).
- Excellent leader with experience supporting and inspiring teams of 10+.
- Commercially astute with cost control and compliance knowledge.
- Calm, organised, and thrives in a fast-paced environment.
