With a focus on whole-animal butchery, hand-rolled pasta, and wood-fired cooking.
The Role
We are seeking a Senior Sous Chef to join the team at a renowned Italian-inspired restaurant in Shoreditch. This is a high-volume, quality-led operation with a focus on people and process, not super creativity. The successful candidate will support the Head Chef in leading a brigade of 30 chefs, managing service lunch and dinner, and delivering exceptional food quality and consistency.

The Restaurant
- Nose-to-tail Italian-inspired restaurant
- High volume quality services
- Brigade of 30 chefs
- All fish butchered in-house, pasta made in-house, cheese made in-house
The Senior Sous Chef Role
- Support the Head Chef in leading the kitchen team of 30 chefs
- Drive consistency, food quality, and service standards
- Manage ordering, stock control, food safety, and compliance
- Train, mentor, and develop the kitchen team
- Step up and run the kitchen in the Head Chef's absence
- Work closely with the Head Chef on operational delivery

The Ideal Senior Sous Chef
- Proven experience as a Senior Sous Chef in a high-volume, quality-led restaurant
- Italian cuisine experience is highly desirable: product or process focused
- Strong leadership and people management skills
- Calm, organized, and thrives in a fast-paced environment
- Commercially aware with good financial acumen
- Available for an immediate start
