On a charming corner of Fitzrovia sits Mortimer House Kitchen, an Italian restaurant, bar and terrace. The menu brings to life fond memories of family summers spent in Orta San Giulio and the Amalfi Coast.
About the Role
As Sous Chef, you will play a crucial role in supporting the Head Chef to run a busy, quality-led kitchen, leading service and ensuring every plate meets our standards. We expect you to bring excellent technical skills, calm leadership and an unwavering attention to detail.

Responsibilities
- Run service and the pass, keeping the brigade organised.
- Lead the kitchen in the Head Chef's absence.
- Support menu development, specials and dish testing.
- Assist with ordering, stock rotation, GP and waste control.
- Train and coach chefs de partie, demi chefs and commis.
- Maintain high standards of food safety, allergen control and cleanliness.
Requirements
- Previous experience as a Sous Chef or strong Senior Chef de Partie.
- Excellent technical cooking skills.
- Calm leadership and clear communication under pressure.
- Understanding of GP, stock control and kitchen costs.
- Flexibility to work evenings, weekends, and holidays as required.
