Role Description

The Senior Sous Chef is a full-time, on-site role based in London, responsible for supporting the Head Chef in the daily operation of the kitchen. This role oversees food preparation and execution across all services, ensuring dishes meet the club’s quality, presentation, and consistency standards. The Senior Sous Chef leads and mentors kitchen brigade members, coordinates station workflows, and helps manage staffing levels during service. They collaborate on menu development, seasonal offerings, and specials, while monitoring inventory, ordering, and cost control. The role also includes enforcing food safety, hygiene, and health and safety procedures, and working closely with front-of-house teams to deliver a seamless guest experience.

  • Significant experience as a Sous Chef or Senior Sous Chef in a high-end, fine dining or luxury hospitality environment.
  • Strong culinary skills, including advanced cooking techniques, flavor profiling, and plating and presentation at an elevated standard.
  • Proven ability to lead, train, and motivate a diverse kitchen team, fostering collaboration, professionalism, and clear communication.
  • Sound knowledge of food safety, hygiene regulations, and health and safety practices, with a commitment to maintaining compliant operations.
  • Experience in menu planning, costing, and stock control to support profitability and efficient kitchen management.
  • Ability to perform effectively under pressure, manage multiple tickets, and maintain quality during busy services.
  • Excellent organizational and time-management skills, with attention to detail and consistency in execution.
  • Flexibility to work evenings, weekends, and holidays in line with club operations.
  • Relevant culinary qualifications or professional training; experience within members’ clubs or luxury gaming venues is an advantage.
