Senior Sous Chef – Central London
An exciting opportunity has arisen for an experienced Senior Sous Chef to join a highly regarded, independent restaurant in Central London, working within a busy, high-volume kitchen focused on exceptional British-Italian cuisine.
This is a serious kitchen operation producing 300+ covers per day, with a brigade of approximately 18 chefs. Everything is made fresh in-house, every day, using high-quality ingredients and maintaining a relentless focus on consistency, standards and execution. We are looking for a Senior Sous Chef who thrives in a demanding but supportive environment and is ready to play a key role in the day-to-day running of the kitchen.
The Role
Working closely with the Head Chef and Group Head Chef, you will be an important part of the senior kitchen leadership team. You will help lead and develop a large brigade, ensuring that food quality, consistency, preparation and service standards remain exceptionally high, even at significant volume. This is a hands-on role for someone who understands that great restaurants are built around people, preparation, discipline and consistency.
Key responsibilities
- Support the Head Chef in the daily running of an 18-chef kitchen brigade.
- Maintain exceptional food quality, consistency and presentation across high-volume service.
- Lead and motivate the team, setting the right standards and attitude every day.
- Help manage busy services of 300+ covers per day.
- Ensure all food is prepared fresh to the required specification and standard.
- Assist with ordering, stock management, GP control and kitchen cost management.
- Have an understanding of kitchen financials and the commercial side of running a successful restaurant.
- Work closely with the Head Chef to improve financial understanding and commercial performance where required.
- Support recruitment, training, development and performance management of the kitchen team.
- Maintain excellent food hygiene, health & safety and kitchen organisation.
- Help drive consistency across the kitchen, particularly during high-volume periods.
- Work collaboratively with senior management and the wider restaurant team.

What We're Looking For
We are looking for a strong Senior Sous Chef who has experience working in a quality-driven, high-volume restaurant environment. You will ideally have:
- Previous experience as a Senior Sous Chef, Sous Chef or similar senior kitchen leadership position.
- Experience leading a sizeable brigade.
- A strong background in Italian, British-Italian or high-quality contemporary cuisine.
- Excellent technical ability and a genuine passion for fresh, quality ingredients.
- The ability to maintain standards consistently under pressure.
- Experience managing high-volume services.
- A good understanding of kitchen costs, GP, ordering and stock control.
- A positive and professional attitude with strong leadership qualities.
- The ability to develop and motivate chefs at all levels.
- Excellent organisation and communication skills.
- The maturity to work closely with an experienced Head Chef and take ownership when required.
- You don't need to be a financial expert. A solid understanding of the basics is important, but the senior management team is happy to support someone who wants to develop their commercial and financial knowledge further.
