Senior Sous Chef – AngloThai - Marylebone
£50,000 to £55,000 (dependent on experience)
Location: 22-24 Seymour Place, W1H 7NL · Full-time, site-based
AngloThai is a Michelin-starred, Thai-inspired restaurant on Seymour Place in London, the debut permanent home of husband-and-wife team John and Desiree Chantarasak.
John's cooking reimagines Thai flavours through hyper-seasonal British produce, served across a 50-cover dining room and Baan, our 16-cover private dining room, with a wine programme led by Desiree. As the restaurant grows, we are looking for an exceptional, passionate Senior Sous Chef to join the team.
As Senior Sous Chef, you will own the day-to-day running of the kitchen alongside the Head Chef, leading a talented team and protecting the standards the kitchen is known for. You will lead by example on the pass, making sure every dish leaves the kitchen exactly as John intends, and step up to run the kitchen in the Head Chef's absence.
You will report to the Head Chef and support the full operation of the restaurant, the kitchen and Baan. This role will suit an experienced sous chef or senior sous chef from a premium or Michelin-starred kitchen, who leads from the front, cares deeply about produce, and wants to grow a team as well as their own craft.
This is a hands-on leadership role for someone who lives and breathes hospitality.
Key Responsibilities
- Run the kitchen day to day alongside the Head Chef, upholding the standard on every dish.
- Lead by example on the pass, checking every plate before it leaves the kitchen.
- Step up to run the kitchen in the Head Chef's absence, keeping service smooth and consistent.
- Support the full operation of the restaurant, the kitchen and Baan, our private dining room.
- Motivate and inspire the team to give their best every shift.
- Coach and develop the team, building their leadership skills and confidence.
- Manage ordering, stock and supplier relationships accurately.
- Uphold food safety, allergen management and health and safety standards always.
- Work with fresh, top-quality, seasonal produce to the restaurant's exacting standards.
- Keep the kitchen, equipment and storage in excellent order, flagging maintenance early.

I’m in my final year doing Economics and I don’t know whether to apply for grad schemes now or do a masters first. What do you think?
Honest answer — it depends on where you want to end up. A lot of top grad schemes (Big 4, civil service, banking) don’t need a masters. Let’s look at the ones you’d be competitive for now, and we can decide if a masters actually adds anything.
Also worth knowing: most autumn 2026 applications are open now. Timing matters more than you think.

Grad scheme, placement, apprenticeship? Not sure what you want yet — that's fine. Your agent talks it through with you and turns "I have no idea" into a shortlist.
