UNIQUE OPPORTUNITY
A special opportunity has arisen for a skilled & passionate Senior Sous Chef to work under the strong leadership of the highly regarded and talented Head Chef Glenn Gillings & Award-winning Executive Chef Ben Spalding to launch one of the most exciting Italian restaurant openings of 2026 in London.
The kitchen team at the new concept restaurant - Trattoria Poeta will use exceptional produce delivered from an array of some of the finest suppliers in Italy - handled with love & attention to create beautiful dishes.
In addition to contributing to the delivery of high-quality food, maintaining standards, and supporting the creation of exceptional dining experiences that reflect our EPIC values.
As a Senior Sous Chef at Trattoria Poeta, you will take responsibility for the running of the kitchen with Glenn & Ben, ensuring the sections are set to the highest standards consistently and service executed efficiently and to a high standard. You will work collaboratively with your team, maintain organisation and cleanliness, and contribute to smooth and professional service.

The Ideal Candidate Will Present
- Proven Experience: You have strong experience as a Sous Chef or Senior Sous Chef in a high-quality or premium dining environment, ideally within fast-paced kitchens.
- Leadership Skills: You are a confident and capable kitchen leader, able to support, motivate, and develop your team.
- Operational Knowledge: You have a solid understanding of kitchen operations, including prep, service, and maintaining high standards under pressure.
- Financial Awareness: You understand kitchen financials, including GP control, stock management, and minimising waste.
- Quality & Consistency: You are committed to delivering exceptional food standards with strong attention to detail.
- Commercial Awareness: You support in balancing creativity with efficiency, ensuring strong kitchen performance.
- Problem-Solving Ability: You thrive in a fast-paced kitchen and can confidently manage service challenges.
- Passion for Food: You have a strong appreciation for modern cuisine, seasonality, and evolving food trends.
- A Hands-On Approach: You lead from the front, supporting service, maintaining standards, and stepping up in the absence of the Head Chef.
