Sommelier Requirements

  • Previous experience as a Sommelier within a fine dining, luxury hotel or high-end restaurant environment
  • Strong knowledge of wine, with a genuine passion for developing your understanding of regions, producers and vintages
  • Confident in recommending wines and pairings, tailoring the experience to individual guests
  • Comfortable presenting and discussing wines in an engaging, knowledgeable and approachable manner
  • Experience in delivering wine service to a high standard, including decanting and correct wine preparation
  • Passionate about food, wine and hospitality, with a strong understanding of how the two work together
  • A willingness to learn and develop under an experienced wine and restaurant team
  • Warm, friendly and humble personality with a natural approach to guest engagement
  • Impeccable attention to detail and presentation
  • Ability to work calmly as part of a team within a high-level restaurant environment
  • WSET qualification or equivalent wine knowledge would be advantageous

Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at 26. At launch, Tom’s unique approach garnered significant critical acclaim, being awarded a Michelin Star just five months after opening, with a second star following in 2021.

Tom learned his craft from some of the world’s most influential Chefs and spent time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.

Story Cellar, a Parisian-inspired rotisserie-style restaurant, opened in 2023 to much critical acclaim, followed by Dovetale at 1 Hotel Mayfair, offering a sustainably minded, produce-led à la carte menu of reimagined European classics.
