Role Overview
At ETM Group, being a Sommelier is about more than simply knowing your wine. You'll play a key role in creating exceptional guest experiences, combining your knowledge and passion for wine with outstanding service, commercial awareness, and a genuine desire to make every visit memorable.
At Wagtail, our rooftop restaurant in the heart of the City, you'll be part of a premium dining environment where exceptional food, wine and service come together with stunning London views. As part of the ETM Collection, you'll work alongside a talented team to deliver the high standards and refined experiences our guests expect.
As a Sommelier, you will take ownership of the guest wine experience, from confidently guiding guests through our wine list and making personalised recommendations, to supporting the wider team with wine knowledge and training. You'll help drive wine sales and maximise opportunities to increase spend per head, while always ensuring recommendations are genuine, knowledgeable and focused on the guest.

The Ideal Candidate Will Present
- Wine Knowledge: You have a strong knowledge of wine, including key regions, grape varieties and styles, with a genuine passion for continuing to develop your expertise.
- Hospitality Experience: You have previous experience in a Sommelier or wine-focused role within a high-quality or premium dining environment.
- Guest Focus: You are confident engaging with guests and able to make thoughtful, personalised recommendations based on individual tastes, menus and occasions.
- Commercial Awareness: You understand how to drive wine sales and increase spend per head while maintaining an authentic and guest-focused approach.
- Communication Skills: You can make wine approachable and engaging, adapting your knowledge and communication style to suit different guests.
- Attention to Detail: You take pride in presentation, service standards, wine storage and the overall guest experience.
- Team Player: You enjoy sharing your knowledge and supporting the wider team through coaching, training and collaboration.
- Passion for Hospitality: You are enthusiastic, personable and genuinely passionate about delivering exceptional service in a premium environment.
- Professional Approach: You remain calm and confident during busy services and consistently maintain high standards.

A recognised wine qualification such as WSET is desirable, but we're equally interested in your practical experience, knowledge and passion for wine.
