Sommelier – Coreus by Clare Smyth Restaurant | Waldorf Astoria London - Admiralty Arch

Waldorf Astoria London – Admiralty Arch invites an experienced luxury hotelier to join its pre-opening team as a Sommelier for Coreus, Clare Smyth Restaurant. This role presents a unique opportunity to shape the guest experience at this prestigious new hotel opening later this year.


About the Role

At the breathtaking Brigade Headquarters building on The Mall (adjacent to Buckingham Palace), Waldorf Astoria London – Admiralty Arch will boast:

  • 100 elegantly appointed rooms and suites
  • 17,500 sq ft of private residences
  • Two signature restaurants:
    • Coreus by Clare Smyth (Michelin-starred chef)
    • Café Boulud by Daniel Boulud (Michelin-starred chef)
  • A world-class spa
  • State-of-the-art fitness facilities
  • Grand event spaces, including a grand ballroom accommodating 320 guests

Key Responsibilities

  • Contribute to the founding team’s success by helping establish luxury service standards in a high-profile London location.
  • Orchestrate wine service to align with Clare Smyth’s fine-dining concept.
  • Build partnerships with vintners and suppliers to meet bespoke guest requirements during a landmark opening period.
  • Foster a guest-centric culture that reflects Waldorf Astoria’s commitment to exceptional service.

Requirements & Skills

  • Proven expertise as a Sommelier within the five-star luxury hospitality sector.
  • Experience supporting the operations of a new high-end restaurant opening.
  • In-depth knowledge of wine lists in a global hospitality context, with an eye for documentation, succession, and seasonal rotation.
