SOMMELIER / FOH SUPERVISOR - The Pig and Butcher – Islington, London
£42,000 per annum | 40 hours per week

The Pig and Butcher is a critically acclaimed, Michelin-listed, 2 AA Rosette pub and restaurant in Islington, known for exceptional British produce, warm hospitality and a serious but approachable wine programme. Our menu celebrates country-style cooking, working closely with some of the best farms and producers across the UK. We receive whole carcasses of rare and native breeds and butcher our meat on site, creating a food experience that is both produce-led and deeply rooted in quality.

Our wine list features over 450 bins, with a strong focus on independent, family-run vineyards and producers from both classic and emerging regions. We are looking for an experienced Sommelier / FOH Supervisor to join our management team.

This is an exciting opportunity for someone who is passionate about wine, has strong front-of-house and people-management experience, and is looking to take the next step in their career.

The Role

This is a hands-on position combining wine leadership, exceptional guest service and day-to-day FOH supervision. You will work closely with the Management team and Beverage Manager, supporting the development and delivery of our wine programme while playing an active role in the day-to-day running of the restaurant. You will help lead service, develop the FOH team and ensure our guests receive a knowledgeable, engaging and memorable wine and hospitality experience.

Your responsibilities will include:

  • Leading and overseeing wine service across the restaurant
  • Delivering confident, knowledgeable and engaging wine recommendations
  • Helping guests navigate our extensive wine list and creating memorable experiences
  • Working closely with the Beverage Manager on wine selection, supplier relationships, purchasing and the continued development of our wine programme
  • Supporting the General Manager with the day-to-day running of the restaurant
  • Taking an active supervisory role during service and leading the FOH team by example
  • Supporting pre-service briefings, team communication and service standards
  • Maintaining strong relationships with wine suppliers and producers
  • Supporting wine purchasing, stock management and cellar organisation
  • Identifying opportunities to develop and improve our wine offering
  • Delivering regular wine training and development sessions alongside the Beverage Manager
  • Helping develop the knowledge and confidence of the wider FOH team
  • Supporting the onboarding and development of new team members
  • Maintaining high standards of service, presentation and guest experience
  • Working closely with the wider management team to ensure a smooth and successful service

About You

We are looking for someone who combines strong wine knowledge with genuine leadership experience. You will ideally have:

  • Previous experience as a Sommelier, Senior Sommelier, Head Sommelier or similar
  • Previous supervisory or management experience within a quality restaurant or hospitality environment
  • A minimum of WSET Level 2, with Level 3 highly desirable
  • Excellent knowledge of wine, regions, producers and current industry trends
  • Confidence discussing wine with both knowledgeable wine drinkers and guests who are new to wine
  • The ability to lead and motivate a team during busy services
  • Excellent organisation and attention to detail
  • Commercial awareness and an understanding of wine GP and stock control
  • Confidence working under pressure in a fast-paced environment
  • A genuine passion for hospitality and creating exceptional guest experiences
  • A proactive approach to training and developing others
  • The confidence to take ownership while working collaboratively with the wider management team

Most importantly, you will be someone who leads from the front. We want someone who is equally comfortable discussing a bottle of Burgundy with a guest, running a busy service, supporting a junior team member or helping the GM solve an operational issue.
