About the Role
As a Sous Chef at Canary Riverside Plaza London, you’ll step into an exciting new chapter for Vignette Collection—IHG’s first property in the capital. Located in the heart of Canary Wharf, this 142-room hotel boasts stunning views across the River Thames and London skyline, alongside luxurious guestrooms, culinary excellence, meeting spaces, and a health club offering premium wellness experiences.
You’ll be integral to crafting an authentic, experiential dining experience—blending local cuisine, culinary innovation, and meaningful guest connections in a exclusive setting.
Key Responsibilities
The role involves leading, delivering, and developing—your work will inspire both the team and our guests. Key duties include:
- Operational oversight: Ensure kitchen production, cleanliness, and safe systems of work through accountability for the entire kitchen operation.
- Menu innovation: Collaborate in developing dishes that reflect local influences while staying ahead of food trends.
- Team leadership: Train, mentor, and up-skill the Chef team to deliver exceptional culinary experiences under your guidance.
- Cross-functional versatility: Execute all kitchen sections during every service to uphold a seamless, high-efficiency operation.
Requirements & Qualifications
To thrive in this role and lead effectively, you must have:
- Mechanical expertise: Proven experience as a Senior Chef De Partie or Sous Chef in properties of comparable size.
- Compliance & safety: Level 3 Food Safety certification, along with knowledge of HACCP principles.
- Operational systems: Familiarity with key platforms to support kitchen efficiency, including:
- Micros Symphony (or a similar POS system)
- Procure Wizard or equivalent procurement tools.
- Brand expertise: Understanding of IHG’s quality and consistency standards for food, including creating menus, sourcing suppliers, and maintaining exceptional product standards.
- Industry insight: Enduring knowledge of global culinary trends, supplier networks, and relevant networks outside the hotel.
- Section proficiency: Technical skills across every kitchen section in multiple service rotations to facilitate smooth kitchen operations.
