Kioku by Endo is seeking a talented Sous Chef to join our kitchen team in London and support our mission to create meaningful, memorable dining experiences through world-class Japanese-inspired cuisine.

About Us:

Kioku means memory in Japanese—this restaurant is just that: a journey of meaningful moments curated by Chef Endo Kazutoshi, a third-generation sushi master. From Yokohama to Tokyo to Spain, Endo-san’s experience informs a menu that celebrates both Japanese precision and Mediterranean warmth. Located in The OWO and overlooking Trafalgar Square, Kioku by Endo is a personal, evolving reflection of a culinary life steeped in heritage and innovation.

The Role:

As Sous Chef, you will work closely with our Executive Chef to lead a kitchen team that celebrates the beauty and integrity of Japanese produce. You will play a critical role in maintaining the highest standards of execution, contributing to menu development, and ensuring the kitchen runs smoothly during every service.

What We’re Looking For:

  • Proven experience as a Sous Chef in a high-end, fine dining or Michelin-recommended kitchen.
  • Deep respect and knowledge of Japanese produce, seasonality, and culinary techniques.
  • An understanding of the cultural values that shape Japanese hospitality and kitchen conduct.
  • Creative, hands-on leadership with the ability to train and inspire junior chefs.
  • Strong organisational skills and calmness under pressure.
  • A meticulous eye for detail and an unwavering commitment to quality.

Requirements:

  • You must have the right to work in the UK without corporate sponsorship.
