At Wright Brothers, we’ve been sourcing and serving exceptional sustainable seafood for over 20 years. What started with our co-founders Ben Wright and Robin Hancock selling oysters has grown into the UK’s leading seafood supplier, Wright Brothers Wholesale, delivering premium seafood to over 500 restaurants across the country.

The Role
As Sous Chef, you’ll play a key leadership role in the kitchen — supporting the Head Chef in delivering exceptional food quality, maintaining operational standards, and leading a motivated and high-performing team.
Working closely with the Head Chef, you’ll help oversee the day-to-day running of the kitchen, ensuring every dish reflects the quality, consistency, and attention to detail that define the Wright Brothers experience. In the Head Chef’s absence, you’ll confidently lead the kitchen operation and support the team to deliver outstanding service.
You’ll combine strong culinary skills with leadership, organisation, and commercial awareness, helping drive both team performance and kitchen efficiency.

What You’ll Be Doing
- Support the Head Chef in the day-to-day management of the kitchen operation
- Lead and inspire the kitchen team to deliver consistently high standards during prep and service
- Ensure all dishes meet company presentation, recipe, and quality standards
- Train, coach, and support junior chefs to develop skills and maintain consistency
- Maintain strong communication across the kitchen team to ensure smooth and efficient service
- Monitor stock control, ordering, portioning, and waste management to support profitability
- Support labour scheduling and rota planning in line with business needs
- Ensure all food safety, HACCP, allergen, health & safety, and hygiene procedures are followed at all times
- Oversee stocktakes, kitchen reporting, and operational administration as required
- Support menu development, recipe implementation, and team training on new dishes and ingredients
- Maintain high standards of cleanliness, organisation, and kitchen maintenance
- Deputise for the Head Chef in their absence, taking full responsibility for kitchen operations

The Type of Person We’re Looking For
You’re a confident and organised kitchen leader who thrives in a fast-paced environment. You know how to motivate a team, maintain high standards under pressure, and balance creativity with operational discipline.
You’ll likely have:
- Previous experience as a Sous Chef in a high-quality kitchen environment
- Strong leadership and people management skills
- Excellent understanding of kitchen operations, food safety, and stock control
- Experience managing service standards, labour, and kitchen organisation
- Confidence leading a team during busy services
- A passion for quality ingredients, seafood, and hospitality
- Strong communication skills and a proactive, hands-on approach
