Sous Chef – Gaia

About Gaia

Gaia is a high-end dining destination focused on exceptional food quality, consistency, and guest experience. We are looking for a passionate and experienced Sous Chef to support our kitchen leadership team and help maintain the highest culinary standards.

The Role

As Sous Chef, you will play a key leadership role in the kitchen, supporting the Executive Chef in daily operations, supervising kitchen staff, and ensuring every dish meets Gaia’s quality and presentation standards. This is an excellent opportunity for a motivated chef looking to grow within a professional and dynamic culinary environment.

Key Responsibilities

  • Support the Head Chef in the day-to-day running of the kitchen
  • Supervise food preparation and ensure consistency, quality, and presentation standards are met
  • Manage kitchen stations and work service as required
  • Assist with ordering, inventory management, and cost control
  • Support menu development and recipe consistency
  • Ensure proper staffing levels to maintain productivity and service standards
  • Train and mentor junior kitchen team members
  • Maintain food safety, hygiene, and operational standards
  • Monitor portion control and food waste
  • Help maintain a positive and professional kitchen culture

Requirements

  • Diploma in Professional Cookery or equivalent experience preferred
  • Minimum 5 years of professional kitchen experience
  • Strong knowledge of kitchen operations and food safety standards
  • Leadership experience in a high-volume or premium restaurant environment preferred
  • Excellent organisational and communication skills
  • Ability to work under pressure in a fast-paced environment
  • Flexible availability including evenings, weekends, and holidays
