Few hospitality roles offer the opportunity to help shape a restaurant from day one.

Join us as Sous Chef at Clerks House Restaurant within the new London Museum, one of London's most anticipated cultural openings. Launching on 28th November in the heart of historic Smithfield, the museum will welcome visitors from around the world, bringing together London's rich history through world class exhibitions, events and exceptional hospitality.

Clerks House will be Smithfield's new all day dining restaurant and bistro, inspired by London's culinary heritage. With 140 covers, the restaurant will serve breakfast, lunch, afternoon tea, dinner, weekend brunch and Sunday roasts, with thoughtful, seasonal food rooted in quality.

Our menus will showcase the very best British produce, including beef and lamb from Green & Fortune's own farm, alongside collaborations with leading chefs such as Robin Gill. Sustainability, seasonality and craftsmanship sit at the heart of everything we do.

About the Role

We are looking for an experienced and passionate Sous Chef to work closely with the Head Chef, lead busy services, develop the team and maintain exceptional standards of quality, organisation and consistency.

You will play an important role in establishing Clerks House as one of London's leading dining destinations from the very first service.

Responsibilities

  • Kitchen Leadership. Support the Head Chef in the day to day running of the kitchen, leading services and maintaining exceptional standards of food quality and consistency.
  • People. Lead by example, coaching and developing the kitchen team and creating a positive, collaborative working environment.
  • Menus. Work closely with the Head Chef to deliver seasonal menus that celebrate outstanding British produce and contribute to menu development.
  • Commercial Performance. Support food costs, labour planning, stock control, ordering and waste management to ensure strong kitchen performance.
  • Standards. Maintain the highest standards of food safety, hygiene, organisation and kitchen compliance.
  • Collaboration. Work closely with the Head Chef, restaurant management team and wider London Museum operation to deliver an exceptional dining experience.

What You Will Bring As Sous Chef

  • Proven experience as a Sous Chef or experienced Junior Sous Chef within a quality restaurant or premium hospitality environment.
  • Confidence leading busy services while maintaining exceptional food quality and consistency.
  • A hands on and supportive leadership style, with experience coaching and developing chefs.
  • Good commercial awareness, including food cost, stock management, waste control and labour.
  • A genuine passion for seasonal British produce, sustainability and memorable food experiences.
  • Excellent organisation, attention to detail and the ability to remain calm in a fast paced kitchen.
  • Creativity, curiosity and a collaborative approach.
