Sushi Chef
As Sushi Chef, you will be responsible for preparing and presenting high-quality sushi and Japanese-inspired dishes while maintaining the highest standard of food quality, hygiene and consistency. Working closely with the Head Chef and wider kitchen team, you will plan an important role in delivering an outstanding guest experience.
Responsibilities
- Prepare and present sushi, sashimi, nigiri, maki rolls and other Japanese dishes to a consistently high standard.
- Ensure all ingredients are fresh, properly stored and prepared in accordance with company standards.
- Manage daily mise en place and stock preparation for the sushi section.
- Maintain excellent food hygiene, food safety and HACCP standards.
- Ensure all dishes are consistently prepared and presented in line with agreed recipes and standards.
- Monitor food quality, portion control and minimise waste.
- Support effective stock control and stock rotation.
- Maintain a clean, organised and fully stocked section at all times.
- Work collaboratively with the Head Chef and wider kitchen team to ensure smooth service.
- Assist with menu development and new dish ideas.
- Support and guide junior kitchen team and members where required.
- Work flexibly across the kitchen operation to support business needs.

Requirements
- Minimum 3 years’ experience as a Sushi Chef in a busy restaurant environment
- Strong knife skills and experience preparing and filleting fish
- Excellent knowledge of sushi, sashimi, nigiri, maki and Japanese food preparation.
- Good understanding of food safety and hygiene regulations.
- Ability work efficiently under pressure in a fast-paced kitchen
- Strong attention to detail and commitment to quality
- Strong team player with excellent communication skills
- Positive and can-do attitude
- Remains calm and professional during busy service periods
- Takes pride in producing high quality food.
- Works well as part of a team and supports colleagues when needed.
- Helps create a positive, respectful and supportive kitchen culture
- Reliable, professional and punctual.
