About the Role

We’re looking for an experienced Sushi Chef de Partie to join our beautiful 2 AA Rosette restaurant in Knightsbridge as part of an exciting new Omakase concept, becoming part of our family and helping to deliver an exceptional dining experience to the most discerning of guests.

As Our Sushi Chef de Partie, You Will...

  • Work within our open kitchen, you will be part of a dedicated team focused on delivering an exceptional Omakase experience, using the finest seasonal ingredients and applying traditional Japanese techniques with a modern approach.
  • Work closely with the Head Chef and senior kitchen team to ensure the highest standards of preparation, presentation and service throughout every sitting.
  • Take responsibility for your section, ensuring that every element is prepared with precision and that every dish is delivered consistently to the highest standard.
  • Play an important role in the daily operation of the sushi kitchen, from mise en place and preparation through to service execution.
  • Work closely with the wider kitchen and front-of-house teams, you will contribute to creating memorable guest experiences and help establish Alba’s new Omakase offering as an exciting and distinctive dining experience.

About You

  • Passionate about delivering exceptional food and maintaining the highest culinary standards
  • Proven experience as a Sushi Chef de Partie or in a similar high-quality sushi/Japanese kitchen environment
  • Strong knowledge of sushi preparation, Japanese ingredients and traditional techniques
  • Excellent knife skills and a strong understanding of fish preparation
  • High standards of presentation, precision and attention to detail
  • Experienced in working in a busy professional kitchen and delivering consistent service
  • Able to work calmly and efficiently under pressure
  • Passionate about learning, developing and contributing to a new culinary concept
  • Strong understanding of HACCP, food safety and kitchen hygiene standards
  • Creative, organised and committed to continuous improvement
  • A positive team player with excellent communication skills
  • Professional, reliable and dedicated to creating an exceptional working environment
  • Passionate about Omakase and delivering a memorable guest experience
