Sushi Chef de Partie - Shanghai Me London
Shanghai-Me is seeking a passionate and highly skilled Sushi Chef de Partie to join our exceptional kitchen team.
This is an exciting opportunity for an experienced Sushi Chef de Partie looking to further develop their expertise in a fast-paced, high-profile restaurant renowned for delivering refined Japanese cuisine with international flair.
As a Sushi Chef de Partie, you will take ownership of the sushi section, working with premium ingredients while maintaining the highest standards of preparation, presentation, and consistency. You will play a key role in ensuring smooth service and supporting the development of junior team members within a dynamic brigade.
The Role
As a Sushi Chef de Partie, your responsibilities will include:
- Preparing sushi, sashimi, nigiri, maki, and other Japanese dishes to the highest standards
- Managing and organising the sushi section during service
- Ensuring consistency, precision, and efficiency throughout busy services
- Assisting with stock control, ordering, and minimising waste
- Maintaining exceptional food hygiene, cleanliness, and organisation
- Supporting and mentoring junior chefs within the section
- Working collaboratively with the wider kitchen team to deliver an outstanding guest experience

About You
We are looking for a Sushi Chef de Partie who:
- Has previous experience as a Sushi Chef de Partie or an experienced Sushi Demi Chef de Partie ready to step up
- Demonstrates excellent knife skills and strong knowledge of Japanese ingredients and techniques
- Thrives under pressure in a quality-driven, high-volume environment
- Has a genuine passion for sushi and continuous professional development
- Possesses strong organisational skills, attention to detail, and a team-focused attitude
- Maintains high standards of professionalism and consistency at all times
