Sushi Prep Chef at Nobu Hotel London Portman Square

As a Sushi Prep Chef at Nobu Hotel London Portman Square, you’ll play a key role in delivering the artistry and quality that define Nobu’s globally renowned dining experience. This role demands precision, passion and a commitment to the highest culinary standards - ensuring every dish reflects Nobu’s signature approach to Japanese cuisine.

You will

  • Prepare, cut and present sushi dishes to Nobu’s exacting standards
  • Ensure your station is set up and operating efficiently throughout service
  • Follow Nobu recipes and maintain consistency across all dishes
  • Guarantee strict hygiene, safety and sanitation practices at all times
  • Store raw materials safely and maintain cleanliness in all areas
  • Monitor Health & Safety compliance and report any issues promptly
  • Maintain equipment in safe working condition and report breakdowns
  • Handle allergy requests with care and communicate clearly with service teams
  • Support and train new team members, fostering collaboration and excellence
  • Attend team briefings and contribute ideas for continuous improvement
  • Demonstrate a proactive, positive approach to work and guest care
  • Act as an ambassador for Nobu values of Family, Crafted, Smile and Kokoro
