About the Role

Our Head Office department is in the heart of Piccadilly and occupies the 5th & 6th floor of our beautiful flagship store. This central London location offers so much to explore including restaurants, bars, cultural sites, shopping and more, and only a short walk from the Green Park Tube Station and plenty of bus stops.

The Lead Senior Technical Manager is responsible for developing, implementing, and monitoring hygiene, sanitation, and food safety standards across all restaurants, stores, commissaries, and supply chain facilities. This role ensures full compliance with internal policies, local regulatory requirements, and international food safety standards (such as FSSAI, HACCP, ISO 22000). The position plays a critical role in maintaining brand reputation, operational excellence, and customer safety.

Responsibilities

Hygiene & Sanitation Management

  • Establish and maintain hygiene and sanitation standards across all restaurants and central kitchens
  • Develop and implement cleaning and disinfection protocols for all food handling, preparation, and storage areas
  • Conduct regular hygiene audits, inspections, and risk assessments across outlets
  • Monitor pest control programs and ensure compliance with approved schedules and vendors

Food Safety & Regulatory Compliance

  • Ensure full compliance with FSSAI and other applicable food safety regulations
  • Implement and maintain HACCP, ISO 22000, and internal food safety management systems
  • Coordinate with local health authorities and manage documentation for inspections and certifications
  • Investigate food safety incidents and implement corrective and preventive actions (CAPA)
  • Manage Supplier assurance standards for hospitality suppliers and Made in House

Training & Awareness

  • Develop Food standard and Animal Welfare procedures for retail and hospitality areas, work cross functionally to deliver these
  • Work with Sustainability Manager to understand how technical can support the requirements and push standards
  • Design and deliver hygiene and food safety training programs for restaurant staff, kitchen teams, and cleaning contractors and support technologists
  • Promote a culture of hygiene excellence and personal responsibility at all operational levels
  • Develop training materials and manuals aligned with brand and legal standards

Vendor & Supply Chain Hygiene Oversight

  • Audit supplier and commissary practices, ensuring raw material and equipment handling meet standards
  • Work closely with procurement and supply chain teams to maintain hygiene integrity from source to service

Continuous Improvement & Reporting

  • Analyse hygiene audit findings and develop action plans for improvement
  • Track hygiene performance metrics (audit scores, non-conformities, and corrective timelines)
  • Implement technology-based monitoring tools for hygiene tracking and compliance reporting.

Cross-Functional Collaboration

  • Work with Operations, Quality Assurance, Projects, and Maintenance teams to ensure hygienic restaurant layouts, equipment design, and workflows
  • Support new restaurant openings by ensuring hygiene readiness and staff training
  • Work with Senior chefs/Buyers on providing clear guidance
  • Provide direction to team members, giving support and aiding in managing situations when required

Experience and Qualifications

Essential

  • Bachelor’s or Master’s degree in Food Technology, Microbiology, Biotechnology, or related field
  • Extensive experience in food hygiene, safety, or quality assurance, preferably in restaurants, QSR, or FMCG sectors
  • Certified in HACCP / ISO 22000 / FSSC 22000
  • Strong understanding of hygiene and sanitation principles in food service or manufacturing
  • Extensive knowledge of food safety management systems (HACCP, ISO 22000, FSSAI)
  • Expertise in auditing, documentation, and compliance reporting
