The Booking Office 1869 - General Manager

Position Summary

This is a rare opportunity to lead one of London's most iconic restaurant and bar destinations.

As General Manager of The Booking Office 1869, you will take ownership of a business that sits at the heart of St. Pancras guest experience and reputation. From the restaurant and bar to the terrace, private dining and special events, you will be responsible for shaping the future direction of the venue and ensuring it continues to stand out in one of the world's most competitive hospitality markets.

This role goes far beyond day-to-day operations. We are looking for someone who is passionate about creating experiences, spotting trends and bringing fresh ideas to life. Someone who can build excitement around the venue through innovative food and beverage concepts, memorable activations, strategic partnerships and experiences that keep guests coming back.

Working closely with the Hotel General Manager, Executive Chef, Marketing, PR and Commercial teams, you will play a key role in driving awareness, growing revenues and strengthening Booking Office's position as a destination venue for Londoners, international visitors and hotel guests alike.

You will also work closely with ownership representatives and senior stakeholders, helping shape future plans and bringing forward ideas that support the continued growth and success of this landmark business.

Above all, you will be an inspiring leader who creates a culture where people feel empowered, supported and motivated to deliver exceptional experiences every day.

Candidate Profile

We're looking for a natural leader with personality, presence and a genuine passion for hospitality.

You'll have a strong track record of leading successful restaurant, bar or lifestyle hospitality operations and understand what it takes to create a venue that people talk about, recommend and return to.

You are commercially minded but equally passionate about people. You know how to build engaged teams, develop future leaders and create a culture where high standards and great guest experiences come naturally.

You will demonstrate:

  • Proven success transforming hospitality venues into recognised destination dining and social experiences.
  • A highly inspirational leadership style with a passion for developing future leaders and creating a culture of accountability, engagement and excellence.
  • Experience developing innovative food, beverage, entertainment and guest experience concepts that drive visitation, revenue and market recognition.
  • Strong networking capabilities and a well-established ability to build relationships with industry partners, local communities, luxury brands, media contacts and key stakeholders.
  • Experience working collaboratively with Marketing and PR teams to elevate brand visibility, drive social engagement and deliver impactful campaigns and events.
  • Commercial agility with the ability to identify new revenue opportunities, optimise reservations strategy, enhance private dining performance and maximise guest spend.
  • Confidence presenting business performance, future strategies and investment opportunities to senior leadership, ownership groups and asset management stakeholders.

A degree in Business Administration, Hospitality Management or a related discipline is preferred. Experience within the luxury hospitality sector and a strong understanding of the London market would be highly advantageous. Fluency in English is essential, together with a career history that demonstrates progressive leadership experience, commercial achievement and a commitment to excellence.

What You Will Be Expected To Deliver

As General Manager, you will lead all aspects of The Booking Office 1869, ensuring exceptional guest experiences, strong financial performance and operational excellence whilst reinforcing its position as one of London's leading lifestyle dining destinations.

Key deliverables include:

  • Position The Booking Office as one of London's most desirable restaurant and bar destinations through innovation, exceptional service and market-leading guest experiences.
  • Develop and execute a rolling 3, 6 and 12-month strategic plan focused on revenue growth, brand visibility, guest acquisition and commercial performance.
  • Create headline-worthy activations, seasonal experiences, entertainment programmes and events that generate excitement, media interest and repeat visitation.
  • Drive the performance of private dining, celebrations, group bookings and corporate events through close collaboration with reservations, sales and commercial teams.
  • Build strategic partnerships with brands, businesses, local communities and influencers that introduce new audiences and strengthen market positioning.
  • Partner closely with Marketing and PR teams to maximise awareness, social media presence, reputation and guest engagement across all channels.
  • Lead the ongoing development of the terrace, bar and restaurant concepts, ensuring the venue remains contemporary, relevant and competitive within the London market.
  • Present regular business reviews, innovation plans and performance updates to senior hotel leadership, ownership representatives and asset management stakeholders.
  • Drive the development of a unique bar identity and beverage experience that capitalises on the venue's significant footfall and strengthens its reputation as a leading drinking destination.
  • Enhance the overall hotel guest journey by working collaboratively with all operational departments to maximise guest satisfaction, loyalty and commercial opportunities.
