The venue is evolving under new ownership, with Yoo Capital and Deutsche Finance International leading a transformation into a cultural hub. Job Purpose
The Addison is an elite live music venue, hospitality, and culinary destination at Olympia London—home to a premium restaurant and bar at the heart of every guest experience. Exceptional drinks play a central role before, during, and after every performance, supported by a world-class beverage programme that shapes The Addison’s reputation.
This role seeks a strategic beverage leader—a hospitality professional with exceptional expertise in cocktails, spirits, fine wines, and commercial acumen—capable of crafting an innovative, high-end bar programme that sets new industry standards.
The ideal candidate will drive excellence through:
- Developing creative and commercially successful beverage menus
- Championing product knowledge, quality, and training
- Leading a high-performing bar team to deliver unmatched service

Key Responsibilities
Operations & Service Delivery
- Lead the daily operation of all bar and beverage service areas, ensuring seamless delivery during restaurant and event activities.
- Maintain exceptional drink quality, presentation, and presentation in a premium hospitality setting.
- Act as an active, hands-on leader, providing support to the team and ensuring smooth execution during service.
- Develop and uphold bar operating procedures, service standards, and quality controls.
- Ensure compliance with licensing laws, food hygiene regulations, and company policies.
- Support pre- and post-show hospitality, maintaining consistency during high- and low-demand periods.

Beverage Programme & Product Development
- Steer the innovation and execution of cocktails, wine, beer, and non-alcoholic menus, aligned with The Addison’s brand and guest expectations.
- Collaborate with vendors to source premium products and explore cutting-edge beverage trends.
- Keep beverage menus commercially viable, trend-relevant, and market-aligned.
- Train the team on product expertise through structured initiatives.
- Oversee drink consistency and quality across all service points.
Guest Experience
- Deliver exceptional hospitality, upholding The Addison’s premium and curated identity.
- Build strong relationships with members, guests, and artists, responding proactively to feedback.
- Foster a warm, knowledgeable atmosphere in the bar.
- Ensure all artists and performers receive the same welcoming, professional treatment given to regular guests.
- Integrate seamlessly during curated events and private hire functions.
Events & Private Hire Support
- Partner with events and operational teams to fulfil bespoke beverage requirements.
- Align beverages with event themes, offering bespoke packages for corporate and private functions.
- Track service excellence, guest satisfaction, and operational efficiency throughout the event lifecycle.
Team Leadership
- Guide, coach, and develop a high-performing bar team.
- Manage Staffing levels proportionate to business needs while maintaining service quality and labour efficiency.
- Cultivate a guest-focused culture with a collaborative, inclusive environment.
- Lead recruitment, training, and onboarding, supporting staff development and succession planning.
Commercial Performance
- Drive revenue growth through menu optimisation and upselling opportunities.
- Oversee stock control, inventory accuracy, and efficient ordering.
- Minimise waste, optimise profit margins, and identify cost-saving opportunities.
- Balance labour efficiency and guest experience through proactive scheduling.
- Support General Manager in achieving financial, operational, and guest satisfaction targets.

Person Specification
Experience
- Proven track record as a Bar Manager or senior bar leader in premium hospitality.
- Comprehensive knowledge of cocktails, wine, spirits, beers, and beverage trends.
- Experience leading teams in fast-paced, high-demand environments.
- Hands-on experience managing stock, procurement, cost control, and beverage profitability.
- Desirable: Experience in multi-functional hospitality (restaurants, events, private hire).
Skills & Abilities
- Exceptional organisation, administration, and multitasking, with strong Decisional skills.
- Excellent communication and ability to build trust and positive working relationships.
- Commercial insight, with a keen grasp of alcohol cost management and profitability.
- Composed under pressure, with razor-sharp time management skills.
- Proficiency in Microsoft Office (Word, Excel, PowerPoint) and familiarity with hospitality management tools.
- Autonomous, proactive, with capacity to quickly absorb new systems.
- Team player with polished personal presentation.
