Job Description
Waldorf Astoria London - Admiralty Arch is seeking an Assistant Manager – Whiskey & Seaweed Bar, to join the pre-opening team for this highly anticipated new luxury hotel opening later this year.
This is a unique opportunity for an experienced luxury hospitality leader to join the founding team and help shape the guest experience at this landmark hotel.
Located at the end of The Mall opposite Buckingham Palace, Waldorf Astoria London – Admiralty Arch will feature 100 elegant rooms and suites and 17,500 sqft of private residences. The hotel will open with two signature restaurants - Coreus by Clare Smyth and Café Boulud by Daniel Boulud - bringing together two of the world’s most celebrated Michelin-starred chefs. Guests will also enjoy a world-class spa, state-of-the-art fitness facilities, and a collection of grand event spaces, including a ballroom for up to 320 guests.

Responsibilities
Here's what you'll do during a typical day:
As an Assistant Manager – Whiskey & Seaweed Bar, you will support the leadership of the restaurant’s Food & Beverage operation, ensuring exemplary standards of service, culinary presentation, and guest engagement within this signature dining venue. You will play a vital role in delivering a refined, immersive experience that reflects the identity and prestige of Whiskey & Seaweed Bar.
Responsibilities
In this role, you will act as a visible, hands‑on leader on the restaurant floor, balancing service precision with commercial awareness. Your responsibilities will include performing the following to the highest luxury hospitality standards:
Support the delivery of exemplary Food & Beverage service in line with hotel and Hilton brand standards Manage the rhythm and flow of service, ensuring seamless coordination between front‑ and back‑of‑house teams Encourage and support the team to maximise sales opportunities through refined up‑selling and guest engagement Ensure Team Members consistently uphold brand standards and deliver personalised, attentive service Handle guest enquiries and concerns with professionalism, discretion, and effective service recovery Oversee accurate transaction handling and ensure compliance with cash‑handling and billing procedures Assist in managing team scheduling, stock control, and waste reduction to support operational efficiency
What are we looking for?
Role
An Assistant Manager – Whiskey & Seaweed Bar, within Hilton brands leads with poise, attention to detail, and a guest‑first mindset, supporting a high‑performing team across a dynamic Food & Beverage environment. To succeed in this role, you will demonstrate:
Previous experience organising and supporting Food & Beverage service across multiple outlets Proven supervisory experience, with confidence leading teams during service periods Strong delegation and organisational skills Flexibility and a positive, solutions‑focused approach to changing operational demands A genuine passion for mentoring, developing, and inspiring others to contribute to a winning team Proven experience as an Assistant Restaurant Manager or in a comparable leadership role within a luxury or high‑volume hospitality environment is highly desirable
