The Jugged Hare is a traditional British pub and restaurant located near Barbican in the City of London, offering a classic dining experience, warm atmosphere, and a strong focus on exceptional service. Renowned for its game-led menus and seasonal British cuisine, the venue combines heritage character with a refined approach, creating a distinctive and memorable guest experience. As part of ETM Collection within ETM Group, The Jugged Hare sits within a portfolio recognised for operational excellence, people development, and some of London's most distinctive hospitality venues.

Role Overview

At ETM Group, being an Assistant General Manager is both a leadership role and a key step in your progression within premium hospitality. You're not just supporting the operation - you're helping shape the guest experience, developing a diverse team of hospitality professionals, and representing a brand that defines premium through our EPIC values.

Across our two distinct business areas - ETM Collection and ETM Sport London - our Assistant General Managers lead from the front alongside their General Managers. Whether supporting refined rooftop dining within the Collection or delivering high-energy, high-volume service in our iconic Sport London venues, you play a crucial role in driving culture, performance, and atmosphere in your space.

We place our venues in the hands of strong and ambitious leaders. As Assistant General Manager, you will work closely with your General Manager to oversee day-to-day operations, take ownership of key areas of the business, and ensure the delivery of exceptional service and commercial performance. You'll lead from the floor, support team development, and contribute to the success of your venue with energy, accountability, and attention to detail.

The ideal candidate will present:

  • Proven Experience: You have strong experience in a senior supervisory or management role within the hospitality industry, ideally within high-end, premium environments.
  • Leadership Skills: You are a confident and approachable leader with a passion for developing and motivating your team.
  • Financial Acumen: You have a good understanding of restaurant financials and can support in managing budgets and performance.
  • Guest-centred Approach: You lead by example, with a strong focus on delivering exceptional, premium guest experiences and attention to detail.
  • Commercial Awareness: You understand key business drivers, supporting revenue growth, cost control, and overall venue performance.
  • Problem-Solving Ability: You thrive in a fast-paced environment and can confidently manage challenges as they arise.
  • Passion for Food & Drink: You have a strong appreciation for modern cuisine and a good understanding of food and beverage trends.
  • A Hands-On Approach: You are present on the floor, supporting your team and leading by example to deliver high standards of service.
