Assistant Head Sommelier – Brooklands Restaurant, The Peninsula London
The Peninsula London is excited to announce that we are seeking an Assistant Head Sommelier to work within Brooklands Restaurant, assisting with designing and delivering a unique, market-leading wine programme alongside the Head Sommelier.
This role requires a passion for both wines and service, translating expertise into an exceptional guest experience. The restaurant offers contemporary British cuisine from London's rooftop (8th floor**), complete with panoramic views of Wellington Arch and Buckingham Palace Gardens.
The Peninsula Hotels are renowned for their creative cuisine, premium food and beverage offerings, blending tradition with modern innovation using the finest ingredients.

About the Role

Key Accountabilities
- Deliver exceptional wine service with a balance of friendliness, discreet and professional interaction—elevating guest expectations in alignment with Peninsula Service Principles.
- Build and maintain positive Guest and colleague relationships with a focus on collaborative, engaged interactions.
- Work closely with Procurement, Cellar Stores, and other F&B outlets to enhance guest service solutions.
- Handle internal and guest inquiries efficiently and courteously, ensuring timely complaint resolution.

Requirements
- Strong and detailed knowledge of wine pairing with British cuisine.
- 4+ years of experience in a similar role, ideally within a luxury food and beverage environment.
- Qualifications in oenology or wine studies welcomed.
- A friendly yet assertive demeanour, coupled with strong team leadership and concierge expertise.
- Confidence to work under pressure in fast-paced, high-stakes environments.
