Relais & Châteaux at Thornbury Castle are seeking an Assistant Restaurant Manager to join our dynamic Food & Beverage Team. You’ll work in a breathtaking, beautifully restored 1 Michelin Key Hotel and be tasked with delivering crisp 5-star experiences—where every detail reflects a castle’s regal charm. About Us
Tucked away on 15 acres of stunning Gloucestershire countryside, Thornbury Castle Hotel is the only working Tudor castle operating as a hotel in England. Following an extensive multi-million-pound renovation, it offers guests an immersive experience with:
- 26 spacious rooms and suites, each adorned with historic elegance and modern luxury.
- An award-winning restaurant (3 AA Rosettes) and elegant bar.
- Two signature rooms for private meetings and conferences.

Job Description
Role: Full-time permanent position | 40 hours/week | Mainly evening shifts + weekend availability required
Key Duties & Responsibilities
Operations Leadership
- Assist the F&B Operations Manager in overseeing daily operations across all services:
- Breakfast, afternoon tea, dinner and functions (up to 80 guests).
- Ensure 5-standard sophistication* in service delivery.
- Act as head of department in the F&B Operations Manager’s absence.
- Drive procedure excellence, ensuring all procedures meet Relais & Châteaux/AARestuyer standards.

Guest Experience & Service
- Serve as the go-to for menu, drinks pairings, and guest requests, including accommodating food allergies/dietary requirements.
- Manage guest queries/complaints with professionalism, composure, and solutions-focused enthusiasm.
- Uphold high-level service consistent with 2-3 AA Rosette standards.
Staff & Administration
- Contribute to rotas, recruitment, and staff training, focusing on tour-de-force performance.
- Supervise staff across all levels to ensure flawless service.
- Train new and existing team members on hotel-specific operational protocols.
- Maintain financial and HR compliance within the department.
Health, Safety & Hygiene
- Enforce strict Health & Safety policies.
- Guarantee Food Safety compliance at all times.
Compensation
- Base Salary: £30,000/year (on top of the following incentives).
- Monthly service charge and tips, estimating £2,000–£3,000/year (takes home*).
Qualifications & Preferences
We seek an individual whose polished aloofness aligns seamlessly with our castle’s grandeur. We highly value:
- Prior experience at a Relais & Châteaux property or an AA Rosette restaurant.
- Expertise in wines, spirits, and classic cocktails (professional qualifications a plus).
- Dress: impeccable personal presentation (uniform provided on the job).
