Company Description Relais & Chateau at Thornbury Castle are seeking a Assistant Restaurant Manager to join our hard working and professional Food & Beverage Team. You will be working in a unique, beautifully restored Castle, delivering truly memorable and impressive 5★ experiences for our guests.


About Thornbury Castle

Set on 15 acres of breathtaking land, Thornbury Castle Hotel is the only Tudor Castle operating as a hotel in England. Recently transformed through a multi-million-pound refurbishment, it exemplifies regal grandeur.

Location: 20 minutes from Bristol.

Job Description

Full-time permanent role, 40 hours per week Work schedule: Primarily evening shifts and weekend availability required.

Key Responsibilities:

  • Support the Food & Beverage Operations Manager in running the department across breakfast, afternoon tea, dinner, and functions (capacity up to 80 guests).
  • Take full accountability for all F&B operations in their absence.
  • Ensure 2/3AA Rosette hospitality standards are consistently met.
  • Oversee operations, procedures, and compliance with Relais & Châteaux and Rosette standards.
  • Handle menu inquiries (including drinks menus) proactively, offering tailored suggestions.
  • Assume ownership of guest requirements and dietary restrictions (food allergies).
  • Resolve guest complaints and queries diplomatically, professionally, and positively.
  • Enforce Health & Safety and Food Safety protocols within the department.

Team & Leadership Support:

  • Collaborate with the F&B Operations Manager on rotas, recruitment, and departmental staff management.
  • Supervise multi-level departmental staff and enforce performance standards.
  • Develop, coach, and train new/tenured staff on hotel operational expectations and procedures.
  • Maintain adherence to departmental financial and HR policies.

Compensation: £30,000 annual salary + share of service charge and tips (approximately £2,000-3,000/year).


Requirements

Highly Desirable:

  • Previous experience in a Relais & Châteaux property or AA Rosette restaurant.
  • Deep Knowledge of classic cocktails, wine, and spirits, preferably supported by a professional qualification (e.g., sommelier certification/bar professional diploma).
  • Flawless presentation and a polished professional appearance are non-negotiable.
  • Excellent teamwork, communication, and interpersonal skills.
