Become the Temperance Cocoa Rooms Manager at the New London Museum

Few hospitality roles offer the chance to create something from the very beginning. Become the Temperance Cocoa Rooms manager at the new London Museum and help shape one of London's most anticipated hospitality openings of the year. Opening on 28th November in the heart of historic Smithfield, you'll create a destination café that will welcome millions of visitors and become part of London's newest cultural landmark.

We are looking for someone who loves bringing places to life. Someone who gets genuine satisfaction from seeing familiar faces return, remembers people's names and favourite coffees, and believes hospitality is about making every guest feel they belong.

This is far more than a café management role. It's an opportunity to shape Temperance Cocoa Rooms from day one, creating a destination that becomes part of London's daily life. A place where commuters stop every morning, museum visitors linger over lunch, neighbours meet for coffee and friends gather into the evening.

A rare historic survival rediscovered during the museum’s renovation, the former Lockhart’s Cocoa Rooms will return to its temperance roots as a sober socialising space for the city. Adding a modern twist to the original menu, the Temperance Cocoa Rooms cafe will serve customisable hot chocolates, a bespoke recipe ginger beer, coffee mocktails, and a late-night float menu.

Open daily, it will operate round-the-clock hours from Thursday- Sunday to echo the 24hr rhythm of the city. It will be a place where early risers, night owls and post-service crowds can converge. A tee-total meet up space, with room to host community clubs, intimate events and talks.

Food will include pastries, hot carved breakfast and lunch sandwiches, toasties and soups. A signature tamarind and date spiced Chelsea bun will nod to the history of London’s spice trade and global flavours that continue to shape the capital. Coffee will be sourced from Peckham’s Old Spike.

What makes you the Temperance Cocoa Rooms Manager?

  • Operations: Lead the day-to-day café operation, setting the standard for service, quality and guest experience.
  • People: Build, coach and inspire a high-performing team, creating a culture of excellence and continuous development.
  • Food and Guest Experience: Bring our menus to life by championing our produce, sharing the story behind every dish and creating meaningful connections between the kitchen and our guests.
  • Commercial Performance: Maximise commercial performance by combining operational excellence with memorable guest experiences that build loyalty, repeat business and a strong reputation.
  • Collaboration: Work collaboratively with the restaurant, bar, events and wider museum teams to deliver seamless experiences.

What you’ll bring as Temperance Cocoa Rooms Manager?

  • Proven experience leading a quality driven café business with a strong knowledge of coffee and hot drinks as well as great service standards and the ability to confidently bring food and beverage stories to the table.
  • A hands-on leadership style, able to inspire your team and remain calm and decisive during busy service.
  • Strong commercial and operational awareness, with experience managing fast paced service, reactive labour, financial performance and guest satisfaction.
