Role Overview
Location: Mad Swans (South Downs), Frith End Road, Blacknest, Hampshire, GU34 4QL Contract: Full-Time Permanent Earnings: Up to £36,000 per annum, including TRONC (Tips & ServiceCharge) Working Hours:
- 48 hours per week (not exceeding legal limits)
- Operating hours: 6:00 AM – 11:00 PM
- Work any five days a week (with regular weekend shifts)
- Flexible shift pattern based on business needs

Mad Swans is a «boundary-pushing social space» nestled in Southern England, offering a unique experience where guests can revel in social play (such as Padél Tennis, Pickleball, Darts, Golf, and more) while enjoying exquisite dining.
The venue boasts two dining concepts:
- The Potting Shed: Modern Brasserie-style classics with a refreshing twist
- The Hangout: Casual, shareable plates with forefront flavour integrity
Surrounded by lush landscapes, Mad Swans provides unforgettable stays via its Eco Cabins, nestled deeper into nature.
The Opportunity
As Chef de Partie, you’ll play a central role in crafting memorable dining experiences—whether at a private event, family gathering, or group of seasonal visitors.
Key Responsibilities
- Execute cuisine at a continuously high standard, ensuring dishes align with creative yet refined culinary vision
- Collaborate closely with kitchen and front-of-house teams to streamline service and uphold excellence
- Foster a positive, high-performing work environment, driving ambition and mutual respect
- Maintain impeccable hygiene, compliance with HACCP standards, and food safety protocols
- Oversee stock checks, deliveries, and inventory management using Procure Wizard, ensuring supply procedures stay accurate
- Ensure SOP adherence for recipes, workflows, and kitchen operations
- Adhere to culinary specifications while being expressive in plating and flavour definition
- USA and report Health & Safety incidents (accidents, hazards, hazards) per company protocols

Requirements
We are looking for a Chef de Partie who is:
- Adept at multi-tasking and switching tasks under fast-paced conditions
- Comfortable handling cutting-edge kitchen equipment (dishwashers, high-end ovens, etc.)
- A learner and solution-finder, willing to enhance proficiency and tackle new challenges
- Great way with words and can handle editors and leadership in a team setting
- Self-directed and able to support team efforts effectively
- Resilient, self-motivated, and positive under pressure
- Hold a desirable Food Safety Level 3 Certification (prioritized but not mandatory)
- A UK work permit/visa (cannot sponsor)
