The Opportunity
Odyssey Dining is a chef-led, high-end catering business dedicated to the luxury private aviation sector. Curated by two Michelin-starred Chef Jordan Bailey, we deliver restaurant-quality culinary experiences at altitude. We are currently seeking a disciplined and detail-oriented Chef de Partie to join our elite production team in London.
This is a unique opportunity to apply fine-dining techniques within a specialised, high-growth environment, producing world-class cuisine for a global VIP clientele.
Role Overview
As a Chef de Partie at Odyssey Dining, you will take full ownership of your assigned section, ensuring every dish reflects the highest standards of luxury, precision, and consistency. You will balance high-volume production with the intricate requirements of bespoke VIP requests, ensuring all preparations align with our premium brand expectations.
Key Responsibilities
Culinary Execution and Menu Excellence
- Produce luxury menus tailored to private aviation, ensuring impeccable taste, visual presentation, and consistency across all dishes.
- Execute all preparations to exacting specifications, maintaining the standards required for Michelin-level catering.
- Prepare bespoke dishes for VIP clients, including tailored dietary requirements and last-minute adjustments.

Operational Management
- Manage and supervise your assigned section independently, ensuring smooth workflow, organisation, and optimal productivity.
- Ensure all mise en place is completed to exceptional standards and within strict timelines to meet dispatch schedules.
- Oversee the precise labelling, packaging, and storage of all dishes to ensure safe transit and premium in-flight presentation.
Quality, Safety, and Compliance
- Maintain strict adherence to food safety, hygiene, HACCP standards, and aviation-specific protocols.
- Ensure full traceability and best-practice handling of all ingredients at all times.
- Monitor ingredient quality, participate in stock rotation, and proactively identify shortages or quality concerns.
Team and Collaboration
- Provide guidance and support to junior chefs on your section, fostering a disciplined, calm, and collaborative working culture.
- Communicate effectively with the wider production and logistics teams to ensure daily priorities and deadlines are met.
- Represent the Odyssey Dining brand standards during internal tastings and audits.

What You Bring
- Experience: A proven track record as a Chef de Partie or Senior Demi-CDP within a Michelin-starred restaurant, luxury hotel, or high-end catering environment.
- Precision: A meticulous approach to plating, consistency, and high-spec packaging.
- Adaptability: The ability to remain calm and focused under pressure, specifically when handling bespoke or time-sensitive requests.
- Professionalism: Strong communication skills and a commitment to maintaining a clean, organised, and efficient workspace.
- Compliance: A thorough understanding of food safety, health and safety, and HACCP regulations.
