Chef De Partie – Edinburgh Castle


Company Description

Benugo are seeking a Chef De Partie to join our team at Guards Polo Club (now operating under the Edinburgh Castle food operations).

As a Chef De Partie, you will be the brand ambassador for Benugo, creating dining experiences that shape lasting memories. Beyond supporting the Sous/Head Chef in daily operations, you’ll guide and develop junior kitchen staff, fostering a collaborative and high-performing team.

Job Description

Hours & Compensation

  • Full-time role – approx. 37.5–40 hours per week
  • Basic salary: £14.50 per hour (negotiable range: GBP 13.50–14.00 hourly)

Key Responsibilities

Core Operations

  • Prepare and deliver high-standard food under guidance from senior chefs across all dining areas.
  • Support extra functions, ensuring consistent excellence for client dining, staff restaurants, and conferences.
  • Assist in mentoring junior kitchen staff, ensuring they meet service and standards expectations.
  • Maintain smooth daily operations, including menu execution, hygiene compliance, and workplace organisation.
  • Oversee food, staff hygiene, and waste control in adherence to Searcy Health & Safety Policy.

  • Willingness to mentor junior colleagues and uphold high standards.

Your Key Responsibilities in Detail

  • Prepare, cook, and present restaurant-quality dishes across all areas.
  • Support the team under pressure to deliver flawless service.

  • Assist with training junior staff and improving operational efficiency.
  • Contribute to evolving seasonal menus, staying adaptable to fluctuations in demand.

What We’re Looking For

Ideal Candidate Criteria

  • Proven experience as a Chef De Partie or Commis chef eager to advance.
  • Strong organisational skills to multitask across café, tea room, and events service.
  • Proactive approach with a passion for perfection in food preparation and presentation.
  • Flexibility to work evenings, weekends, and bank holidays as required.
