Chef de Partie (Breakfast Chef)

Le Perroquet

Le Perroquet is an all-day French brasserie from Michelin-starred Chef Daniel Rose, offering classic French dishes crafted with seasonality, technique and a sense of occasion in the heart of Mayfair. It will open at The St. Regis London, Mayfair’s newest luxury destination, located at the corner of Conduit and New Bond Street.

As a Chef de Partie (Breakfast Chef), you will take ownership of the breakfast section, ensuring the highest standards of food quality, consistency and presentation during the morning service. Working closely with senior chefs, you will play a key role in delivering an exceptional breakfast experience, preparing and cooking dishes to specification, maintaining organisation and efficiency, and contributing to a seamless and refined culinary experience within a luxury hospitality environment.

Key Responsibilities

  • Prepare, cook and present breakfast dishes according to recipes, quality standards and presentation guidelines.
  • Manage the breakfast section, ensuring consistency, efficiency and smooth service delivery.
  • Prepare a range of breakfast items, including egg dishes, pastries, hot buffet items, continental offerings and à la carte selections.
  • Ensure all mise en place for breakfast service is prepared and organised to the highest standard.
  • Regulate temperatures of ovens, grills and other kitchen equipment to ensure optimal cooking conditions.
  • Monitor food quality, portion control and presentation to maintain the highest standards.
  • Assist with special dietary requirements and guest requests when required.
  • Maintain accurate food logs and ensure compliance with food safety standards.
  • Communicate effectively with the team during service to ensure smooth operations.
  • Inform senior chefs of excess stock for use in menu planning and to minimise waste.
  • Liaise with Food & Beverage teams regarding breakfast menu items, special requests and availability.
  • Ensure all work areas are clean, organised and compliant with hygiene and sanitation standards.
  • Report maintenance issues, safety concerns or equipment faults promptly.
  • Follow all company policies, health and safety, and food safety procedures.

Core Competencies

We are seeking a motivated and detail-focused culinary professional who thrives in a fast-paced kitchen environment and is committed to excellence. You should have:

  • Proven experience as a Chef de Partie/Breakfast Chef within a high-quality, luxury or fine dining environment
  • Strong knowledge of food preparation, cooking techniques and kitchen operations
  • Experience preparing both buffet and à la carte breakfast offerings
  • Passion for high-quality ingredients, presentation and flavour
  • Excellent organisational and time-management skills
  • Ability to work under pressure while maintaining consistency and attention to detail
  • Knowledge of food safety and hygiene standards (HACCP)
  • Strong communication and teamwork skills
  • A proactive and positive attitude with a willingness to learn and develop
  • Professional presentation and a commitment to excellence
