About The Role
Rocco Forte Hotels celebrates the unique identity of every location, fostering a culture where leadership is shared, and individuality is embraced. As part of this legacy hotel destination, we’re seeking a passionate culinary professional eager to elevate sous-chef experience under the guidance of Head Chef Stefano Furci.
Known for seasonal, locally-inspired brasserie cuisine blending quintessential French technique with Edinburgh’s finest produce, our kitchen thrives on creativity, precision, and teamwork. The right chef should thrive on:
- Crafting elevated dishes from scratch using the purest ingredients
- Operating efficiently under the demanding pace of a luxury hotel kitchen
- Self-sufficiency with clear initiative—and mentorship for junior staff
As a valued member of our team, you’ll support the Head Chef Stefano Furci in deliveringexceptional service to our discerning guests.

Key Responsibilities

Culinary Excellence
- Source the finest seasonal products to create a memorable dining experience
- Optimise iterative menus in alignment with the brasserie philosophy blends buttery techniques with locally inspired produce

Operational Leadership
- Collaborate seamlessly with team members during peak service periods
- Take autonomous direction in high-pressure environments
- Ensure food presentation and quality meet the highest standards

Team Development
- Mentor, train, and coach apprentices, commis chefs, and demi-chefs in craftsmanship and service

Schedule Flexibility & Balance
- Hold a reduced schedule: 4 days a week for exceptional work-life balance
