Job Description
Scope of Position
To lead and run a section of the kitchen, overseeing and managing commis chefs and demi chef de parties, while assisting sous chefs in the preparation and service of food in accordance with Raffles London standards. The role also requires adherence to strict cleanliness, equipment inspections, and hygiene protocols.
Responsibilities
Operation
- Lead and manage a niche kitchen section with responsibility for production, service, and policy compliance.
- Execute procedures, methods, and recipes as instructed.
- Maintain correct food storage, rotation, and labelling for all ingredients, equipment, and dry goods.
- Work closely with sous chefs to coordinate stock ordering, deliveries, and inventory control.
- Involvement in training demi chefs, commis chefs, and apprentices to ensure high-quality standards.
- Assist in production development and refinement of dishes across all outlets, maintaining luxury-level consistency.
- Support strategic kitchen workflow improvements for efficiency and growth.
- Represent the brand by explaining services to guests, visitors, and employees.
- Respond promptly and efficiently to service requests from team members and guests.
- Provide cover in the absence of senior managers or as may be required.
- Willingness to adapt by working in other departments/restaurants when assigned.

- Champion awareness of all Health & Safety precautions across all departmental tasks.

Qualifications, Skills & Experience
Essential
- Ability to work on a rotating shift basis, including evenings, nights, weekends, and holidays as required (24-hour operational coverage).
- Proven ability to deliver high-level service under pressure in a fast-paced luxury environment.
- Strong written and verbal communication skills, essential for team collaboration and guest interaction.
- Exceptional time management with a capacity to multi-task, while maintaining a presentable, immaculate, and professional demeanour.
- Demonstrated ability to adapt to a dynamic schedule, ensuring commitment to round-the-clock guest service.
Desirable
- Previous experience as a demi chef de partie or similar leadership role.
- Proven ability to lead a kitchen section confidently.
- Experience within a luxury hotel environment, preferably working with Lloyd’s List (LQA), Forbes 5-Star, or equivalent standards.
- Skill in troubleshooting problems and identifying areas for improvement.
