Head Chef (Defence & Government Services) – Full-Time (37.5 hours per week)

We’re recruiting an ambitious Chef to help design exceptional food experiences for Defence professionals—full-time (contracting to 37.5 hours/week), working within the UK’s market-leading food service company.

As part of Compass Group UK&I, our Defence team (ESS) delivers high-quality, bespoke catering to 250+ UK military sites, government facilities, and energy sector locations. This role isn’t just about cooking—it’s about creating memorable, high-energy food experiences that align with our clients’ demanding schedules while maintaining strict hygiene, safety, and operational standards.


About the Role

This is a hands-on Chef position, with the opportunity to shape menus, support team development, and speak for Defence’s reputation. Ideal candidates blend passion for food innovation with a commitment to delivery under pressure, paired with the adaptability to work across 5 days a week (rotating shifts).

You’ll:

  • Develop and refine high-priority, on-site food services (including Ready-To-Eat [RTE] and hot meals) for Defence and secure facilities.
  • Collaborate with operations teams to prioritise food sourcing while partnering with Defence contractors on tender processes.
  • Interpret and exceed Defence-specific food standards, including defence-specific and اختـارـات Award certifications.
  • Contribute to menu development, incorporating elevated comfort food principles within operational constraints.
  • Represent Defence identity and standards through consistent food quality and attention to financial controls.

Key Responsibilities

Food Delivery & Innovation

  • Design and execute high-quality meals and snacks, ensuring they meet Defence-specific requirements (e.g., Standard 7, RTE, canteen services).
  • Forecast, order, and manage stock efficiently, minimising waste while ensuring ** discrepancy-free deliveries** across sites.
  • Adapt to mission-driven rapid scaling, adjusting schedules for peak demand (e.g., base operations shifts).
  • Lead product innovation projects, focusing on meal variety, portion control, and sustainability.

Leadership & Compliance

  • Supervise a small kitchen team, fostering collaboration in a fast-paced environment.
  • Ensure food safety and hygiene compliance as per UK legislations (including FSA), ESS Group Hygiene Manual, and Defence standards.
  • Champion Defence’s corporate policy on health, safety, and environmental sustainability.
  • Act as ambassador for Defence culture, engaging with contractors, subcontractors, and on-site teams to uphold standards.

Essential Requirements

  • Extensive Chef experience, with proven ability to:
    • Direct team kitchens (prep + delivery).
    • Adhere to military/government food handling standards.
    • Operate in high-volume catering environments.
  • Core qualifications:
    • City & Guilds 706/1 & 2 (Chef de PartieέντCopine) as a minimum, or equivalence (e.g., SVQ Level 3).
    • Valid Food Hygiene Level 2 Certificate (ESS may recognise S56 or S63 as part of a health & safety score).
    • Defence specific knowledge (e.g., past experience with ESID or Defence catering) is desirable.
  • Resilience and collaboration:
    • Ability to support contested periods (e.g., closed standards audits, high-visibility events).
    • Comfort working across multiple roles (catering, supply chain).
  • Adaptability:
    • Degree of travel to manage remote site activations (e.g., berthing vessels on rigs, floatels).

Typical Daily Shifts

  • Between 06.30 and 15.30 hrs (Boston/Maritime times common, with some period weekends).
  • Fixed average of 16 hrs/week overtime may be offered to all jobholders. [Note: Actual shifts may vary based on site-specific requirements.]
