Chocolatier / New Product Development

About the Role

As our Chocolatier/New Product Development, you’ll be a core part of the chocolate team, working hand-in-hand with the Head of Chocolate to bring our cocoa-free products to life. This is a genuinely hands-on role—split between:

  • Production, including making samples, fulfilling customer briefs, and keeping the lab running smoothly.
  • Development, helping test, refine, and scale new recipes and formats.

You’ll need a sharp palate, a methodical mindset, and a real passion for getting texture, flavour, and functionality right. You’ll take pride in your work and records, maintain the highest food safety standards, and thrive in a collaborative, fast-paced environment.


Responsibilities

Production & Samples

  • Prepare and produce customer samples, sales samples, and bespoke requests accurately and on time.
  • Support day-to-day production planning and scheduling in collaboration with the Head of Chocolate.
  • Maintain quality, consistency, and efficiency across all production runs.
  • Manage stock levels, ingredient prep, and lab organisation to ensure smooth production flows.

Recipe Development & R&D

  • Develop and test new cocoa-free chocolate recipes, prioritising flavour, texture, and product objectives.
  • Work closely with the Head of Chocolate on trials of new substrates, formats, and formulations.
  • Support technology transfer from lab-scale trials to pilot and production runs.
  • Contribute to the continuous improvement of existing products by incorporating customer and internal team feedback.

Quality, Safety & Documentation

  • Maintain rigorous food hygiene and safety standards, including full HACCP compliance.
  • Keep accurate batch records, development notes, and QMS documentation.
  • Support audit readiness and internal quality control processes.

Cross-Functional Collaboration

  • Coordinate timelines, stock, and bespoke production requests with the Operations team.
  • Prepare for tastings, demos, and customer-facing events in support of the Commercial team.
  • Gather and provide customer insights to inform future recipe and product improvements.

Requirements

  • A background in pastry or chocolate—either professional experience or formal training is strongly preferred.
  • Strong intuition for texture, flavour, and technique, with the ability to translate this into repeatable, scalable recipes.
  • Hands-on experience in a production or development kitchen environment.
  • A methodical, detail-oriented approach to problem-solving and troubleshooting.
  • Solid food safety knowledge—adequate experience with HACCP is ideal.
  • Excellent recordkeeping skills and a collaborative, team-first working style.
  • Genuine curiosity about innovative ingredients and sustainable food systems.
