Commercial Manager – Multi-Site Pub Group
Goodmerch Pubs Ltd is hiring a Commercial Manager to own top-line commercial performance across our growing hospitality group.
About us
Goodmerch Pubs Ltd is an independent hospitality group operating two established pubs: The Red Lion Tavern in Chipping Campden (with Greene King Pub Partners) and The Navigation Inn in Wootton Wawen (with Stonegate Group).
Since we started trading in late 2025, we've grown quickly — generating almost £500,000 in gross sales in our first eight months across food, drink, letting rooms, functions and B2B tour trade. As we scale, we're building out our commercial capability at group level.
The role
This is a strategic, analytical group-level role reporting directly to the Director — not a venue operations position. You'll sit above our site General Managers, focused on pricing, margin, yield and revenue growth rather than day-to-day operations.

What you'll do
- Own group revenue budgeting and forecasting across food, drink, letting rooms and functions
- Lead menu engineering, pricing architecture and gross profit (GP%) management with Head Chefs
- Manage rooms revenue at The Red Lion Tavern — dynamic pricing, OTA vs direct channel mix, RevPAR optimisation
- Develop function, wedding and private hire revenue across both sites
- Grow B2B partnerships with tour operators, coach groups and corporate accounts
- Lead supplier negotiations and category management across food, drink, energy and services
- Build commercial dashboards from EPOS and till data (Power BI, Excel and equivalent) to inform weekly trading decisions
- Build forecasting models for revenue, GP% and rooms occupancy
- Identify opportunities to introduce commercial technology and analytics tools across the estate
- Run commercial due diligence and financial modelling for pipeline site acquisitions
- Deliver weekly trading reviews and monthly commercial reporting to the Director
What we're looking for
Essential:
- Bachelor's degree (RQF Level 6) in Business, Hospitality Management, Commercial Management, Finance, Business Analytics or a related discipline
- 3+ years in a commercial, revenue management, category management or head-office analytical role, ideally within multi-site hospitality, retail or consumer sectors
- Demonstrable expertise in GP% management, pricing strategy, RevPAR and EPOS analytics
- Strong Excel and data analysis skills, including Power BI or Tableau
- Experience with EPOS systems, revenue management systems and forecasting techniques
- Full UK driving licence — role requires regular travel between sites
- Right to live and work in the UK, or eligibility for sponsorship under the Skilled Worker route

- SQL or business intelligence platform experience
- Hotel or letting-room revenue management background
- Multi-site commercial roll-out or acquisitions experience
- Familiarity with the UK licensed trade
What we offer
