Commis Chef

Commis Chef – Defence & Government Operations (35 Hours/Week)

We’re looking for an ambitious Commis Chef to join our team and help craft outstanding culinary experiences for those serving in essential Defence and Government roles.

As part of ESS, a division of Compass Group UK & Ireland, you’ll support over 250 UK military establishments, high-security police locations, and energy sector clients—delivering exceptional food under pressure while building meaningful careers within a team that values individuality and ambititors.

Key Responsibilities:

  • Preparing delicious, high-quality dishes that exceed customer expectations
  • Working as a team player, collaborating efficiently with a fast-paced kitchen crew
  • Assisting with general kitchen tasks as required (food prep, plating, storage, etc.)
  • Representing Compass Group UK&I with professionalism, upholding our brand image
  • Adhering to Food Handling & Hygiene regulations ( Food Safety Standards, safe food prep)
  • Ensuring strict Health & Safety compliance in all operational practices

What We’re Looking For

We’re searching for an individual who thrives both in the heat of a kitchen and in the delivery of exceptional customer service. Key traits include:

  • Enthusiasm & resilience: Eager to refine your skills whilst meeting high standards
  • Personality: A passionate communicator who builds strong working relationships
  • Initiative: Takes accountability, makes decisions for quality outcomes—always for the customer
  • Pressure handling: Confident and dependable under time-sensitive demands
  • Timekeeping & reliability: Ninety-second accuracy in shift logs?-character aligned—just asking
  • Administrative readiness: Compliance-focused, aware of Food Safety Case regulations

You’ll also have: ✔ A background in Defence catering or similar high-volume static food preparation (desirable) ✔ General knowledge of modern menu trends or traditional British Defence menus

  • ~250 UK military bases (including training centres)
  • Secure police & sensitive sites
  • On- and off-shore energy installations (rigs, floatels)
