Commis Chef

The Commis Chef supports the kitchen brigade in delivering high-quality dishes in line with the standards of the Montagu Arms Hotel. Working under the guidance of senior chefs, this role is ideal for an aspiring chef looking to develop professional skills in a luxury hospitality environment.

Key Responsibilities

  • Assist in the preparation and cooking of fresh, seasonal ingredients across different kitchen sections.
  • Maintain cleanliness, organisation, and food safety standards in accordance with hygiene regulations.
  • Support senior chefs during service to ensure timely and consistent delivery of dishes.
  • Learn and follow recipes, techniques, and presentation standards.
  • Contribute to stock rotation, storage, and basic kitchen administration tasks.

Key Requirements

  • A passion for food and a desire to build a culinary career.
  • Basic kitchen experience or relevant culinary training.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Strong teamwork, reliability, and attention to detail.

Apprenticeship Details

Apprenticeships include time away from working for specialist training. You’ll study to gain professional knowledge and skills.

  • Training provider: LIFETIME TRAINING GROUP LIMITED
  • Training course: Commis chef (level 2)

Course contents include a wide range of culinary skills from knife work and ingredient preparation to cooking various dishes, pastry, desserts, and applying food safety and hygiene regulations. It also covers teamwork, communication, and personal development.

Location and Working Conditions

Due to the hotel’s rural location in Beaulieu, there is limited or no public transport available, so candidates will need their own reliable transport or means of commuting.
